This vegan chocolate mousse is thick, rich, and incredibly decadent.
It has a deep chocolate flavor, a lovely light sweetness, and THE BEST texture. Like, who knew a whole food plant-based dessert could be so indulgent?!

Why this recipe works
- Tofu: Yes, there is tofu in this mousse. BUT you can't taste it at all. Actually, the silken tofu is what gives the mousse an ultra thick and creamy texture. And it's not like using coconut milk because there's no added flavor.
- Unsweetened Chocolate: using unsweetened chocolate (as opposed to a sweetened chocolate) makes this mousse taste even more decadent. The chocolate is thick and creamy! And you add just enough sweetness with maple syrup to make it taste good. But the true richness comes from the deep chocolate flavor.

Ingredient Notes & Substitutions
- Silken Tofu: it's important to use silken tofu or else the mousse will be too thick or chunky. You can find silken tofu in the refrigerated section of the grocery store.
- Unsweetened Chocolate: use unsweetened chocolate for the most rich and decadent mousse. If you want more sweetness you can always add more maple syrup
- Maple or Date Syrup: I used maple syrup in this recipe. For a completely fruit sweetened version, you can use date syrup instead.
- Vanilla Extract: a splash of vanilla helps enhance the chocolate flavor
- Espresso Powder: Espresso powder is like instant coffee, but stronger and richer! Coffee really helps bring out the chocolate flavor, so I highly recommend grabbing some espresso powder for this recipe. Espresso powder is best, but instant coffee can be used as a substitute
- Salt

How to make Vegan Tofu Chocolate Mousse
Step 1. Add all the ingredients to a blender or food processor. Blend until completely smooth, scraping the sides as necessary.

Step 2. Transfer to ramekins or mason jars and refrigerate 1 hour.

FAQ & Expert Tips
I used some medium sized ramekins to make four generous servings. You can also use small mason jars.
Cover and refrigerate any leftovers.
If covered and refrigerated properly, this mousse will last up to a week in the fridge.
