The dressing is just a simple mixture of vinegar, maple syrup, salt & pepper. But that acid & sugar combo is so tasty. Throw on that minty flavor of fresh basil and you'll be craving a bowl of this salad.

Ingredient Notes & Substitutions
- Beans: canned beans are great in this recipe - they save so much time. I used cannellini beans and chickpeas. You could also add edamame, black beans, or pinto beans if you'd like.
- Celery: if you don't like celery, you can sub another crunchy veggie like bell pepper
- Yellow Onion: you can also use a white or red onion
- Basil: the peppery, minty flavor of basil is a game changer in this recipe - don't skip it!
- Garlic: I use raw garlic in this recipe, but if you want to reduce the garlicy bite or just create a sweeter flavor you can use roasted garlic
- White Wine Vinegar: or apple cider vinegar
- Date or Maple Syrup: for a completely fruit-sweetened dish use date syrup.
- Salt & Pepper

How to make Vegan White Bean Salad
Step 1. Prepare the dressing. In a small bowl mix the white wine vinegar, syrup, salt and pepper.
Step 2. Add the beans, celery, red onion, basil, and garlic to a large bowl.

Step 3. Add the dressing and toss to combine.
Step 4. If desired, transfer to the fridge and chill for an hour to let the flavors combine. Serve and enjoy!

Vegan White Bean Salad (Oil-Free)
Ingredients
- 1 15- Ounce Can Cannellini Beans
- 1 15- Ounce Can Chickpeas
- 3 Stalks Celery chopped
- ½ Yellow Onion finely chopped
- ½ Ounce Basil chopped or chiffonade cut
- 2 Cloves Garlic minced
- ¼ Cup White Wine Vinegar
- 3 Tablespoons Date or Maple Syrup
- 1 Teaspoon Salt
- ¼ Teaspoon Pepper
