Make a vegan version of the classic Greek street food at home. These Vegan Gyros are delicious loaded with hummus, vegan tzatziki, seasoned tofu, Greek fries, and veggies. A Mediterranean-inspired meal that's perfect for lunch or dinner.
Prepare the tofu. Slice the tofu into thin rectangles. Heat the oil, if using, in a non-stick pan over medium heat. Add the tofu and cook 3-5 minutes per side until each side is golden brown and the tofu is firmer in texture. Add the soy sauce, agave, Italian seasoning, oregano, paprika, garlic powder, and onion powder. Stir well and cook for another 3-5 minutes until the seasonings have evenly coated the tofu and the tofu is brown.
Assemble the gyros. Spread 2 tablespoons each of hummus and tzatziki on a pita. Add a few pieces of tofu, a few fries, and some lettuce, onion, and tomato. Sprinkle on some fresh parsley or dill.
