On a recent family vacation, we stopped at a restaurant for a quick lunch and ended up in an authentic Greek place with tons of vegan options, including gyros.
One look at the vegan gyro and I was sold! The pita, the hummus.. even fries stuffed into this thing. So good!
I was inspired by the gyros, so here we are with my homemade version. Loaded with my classic hummus recipe, my vegan tzatziki, these fabulous Greek fries, and a flavorful seasoned tofu. So so good!

Ingredient Notes & Substitutions
- Pitas: grab your favorite store-bought pita. Use GF if needed
- Loaded Greek Fries: totally optional, but my Loaded Greek Fries are delightful in this dish
- Hummus: you can use a store-bought hummus, but homemade hummus is so much
- Vegan Tzatziki: this is one thing that's pretty hard to find vegan in stores. But my vegan tzatziki is super easy to make with vegan yogurt, cucumber, and herbs.
- Romaine Lettuce: or any green leaf lettuce
- Red Onion: or yellow
- Roma Tomato: feel free to use cherry tomatoes or beefsteak
- Parsley or Dill: a pinch of fresh herbs takes the flavor up a notch

Seasoned Tofu
- Super Firm Tofu: look for super firm tofu, this is the vacuum packed tofu that is pre-pressed. This tofu holds up significantly better than any other firmness level. If you can't find super firm, use extra firm instead
- Extra Virgin Olive Oil: for cooking, optional
- Soy Sauce, Tamari, or Liquid Aminos: this adds salty flavor. For gluten-free, use tamari or liquid aminos
- Agave: for a bit of sweetness and to help with caramelization. I typically use agave, but maple syrup works the same!
- Spices: Italian seasoning, oregano, paprika, garlic powder, onion powder. These are the real magic of the tofu. The flavors mix to make a seasoned chicken vibe

Step-By-Step Instructions
Step 1. Prepare the loaded Greek fries, if desired.

Step 2. Prepare the tofu. Slice the tofu into thin rectangles. Heat the oil, if using, in a non-stick pan over medium heat. Add the tofu and cook 3-5 minutes per side until each side is golden brown and the tofu is firmer in texture. Add the soy sauce, agave, Italian seasoning, oregano, paprika, garlic powder, and onion powder. Stir well and cook for another 3-5 minutes until the seasonings have evenly coated the tofu and the tofu is brown.

Step 3. Assemble the gyros. Spread 2 tablespoons each of hummus and tzatziki on a pita. Add a few pieces of tofu, a few fries, and some lettuce, onion, and tomato. Sprinkle on some fresh parsley or dill.

- ½ Teaspoon Dried Oregano
- ⅛ Teaspoon Paprika
- ⅛ Teaspoon Garlic Powder
- ⅛ Teaspoon Onion Powder
