Ingredient Notes & Substitutions
- Apple Cider: look for apple cider with no added sugars - apples should be the only ingredient
- Brown Sugar: to make sure this syrup is vegan, be sure to use a vegan-friendly brown sugar. I like to make my own brown sugar (it takes 5 minutes and is WAY cheaper) to ensure I have vegan sugar. But any brown sugar will work.
- Cinnamon: there are two cinnamon options, depending on how much time you want to spend. Cinnamon sticks make a smoother texture, but you need to steep them in the syrup for much longer. Ground cinnamon is easier and quicker, but you'll need to strain out the particles. Personally, I'm opting for the ground cinnamon every time - I don't notice the particles and it's WAY quicker.

Step-By-Step Instructions
Step 1. Add the sugar and apple cider to a small saucepan. Bring to a medium boil.

Step 2. Stir in the cinnamon (or add sticks if using). Let boil 2 minutes.

Step 3. Remove from the heat and stir in the vanilla. Let cool completely before storing. (If using the cinnamon sticks, let sit at least 1 hour.)

Pro Tip: Reduce the syrup slightly longer for a thicker, more concentrated version perfect for drizzling on ice cream.

If you hear simple syrup, this is referring to syrup made with white sugar.
