    Starbucks has pulled back on their apple recipes this year, but if you're still craving that apple flavor, you can make your own apple syrup at home!

    It's easy to make and takes only five minutes!

    This copycat version of Starbucks' Brown Sugar Apple Crisp Syrup is delightfully rich. Bursting with apple flavor, with depth from brown sugar, and the warming fall cinnamon.

    It's the perfect syrup for a homemade apple crisp latte or whatever fall drink you dream up!

    Ingredient Notes & Substitutions

    • Apple Cider: look for apple cider with no added sugars - apples should be the only ingredient
    • Brown Sugar: to make sure this syrup is vegan, be sure to use a vegan-friendly brown sugar. I like to make my own brown sugar (it takes 5 minutes and is WAY cheaper) to ensure I have vegan sugar. But any brown sugar will work.
    • Cinnamon: there are two cinnamon options, depending on how much time you want to spend. Cinnamon sticks make a smoother texture, but you need to steep them in the syrup for much longer. Ground cinnamon is easier and quicker, but you'll need to strain out the particles. Personally, I'm opting for the ground cinnamon every time - I don't notice the particles and it's WAY quicker.

    Step-By-Step Instructions

    Step 1. Add the sugar and apple cider to a small saucepan. Bring to a medium boil.

    Step 2. Stir in the cinnamon (or add sticks if using). Let boil 2 minutes.

    Pro Tip: Reduce the syrup slightly longer for a thicker, more concentrated version perfect for drizzling on ice cream.

    What's the difference between brown sugar and white sugar syrup?

    If you hear simple syrup, this is referring to syrup made with white sugar.

    Brown sugar adds a richer, deeper flavor thanks to the molasses content. Try it in something you'd usually use regular simple syrup for and you'll taste the difference!

    Can I make this sugar-free?

    Try using coconut sugar instead of brown sugar.

    Stored in an airtight container in the fridge, it lasts up to a month.
