Overnight oats are one of those breakfasts that I return to quite frequently. They are so quick and easy. Perfect for packing in protein. And I'm always dreaming up a new flavor.
These almond butter overnight oats are a nutty, sweet, earthy breakfast. Almond butter is naturally quite sweet (even in an unsweetened nut butter) which to me makes these oats even more appealing - no added sugar needed!
Plus, nut butter in your oats is incredible! It makes for SUCH a thick and creamy porridge. So good!
Serve with some fresh almond butter and homemade vanilla almond granola on top and you've got yourself a breakfast of champions.

- Rolled Oats: rolled oats are ideal for overnight oats because they produce the best texture after sitting in the fridge all night. Quick oats can also work.
- Milk: I used soy milk for extra protein, but feel free to use your preferred milk. Use almond milk for extra almond flavor!
- Yogurt: I used non-dairy Greek-style yogurt for even more protein
- Almond Butter: look for an oil-free and sugar free nut butter (my homemade almond butter is oil-free!)
- Protein Powder: I used Naked Nutrition's Almond Powder, which is my go-to protein powder these days. Bonus that it adds to the almond flavor! Feel free to use your protein powder of choice or omit the protein.
- Vanilla Extract
- Salt: just a pinch of salt helps to enhance the overall flavor, especially since most almond butters are not salted

Step 1. In a large bowl (or two separate mason jars) mix all the ingredients thoroughly until combined.

Step 2. Cover and refrigerate for several hours or overnight. Serve with extra almond butter!

Tips for the best overnight oats
- Add sweetness. If you're using an unsweetened protein powder or just want a bit more sweetness in your breakfast, add a few teaspoons of maple syrup or agave.
- Choose the protein-rich options. Soy milk and a non-dairy yogurt with protein added in are both great options for your oats, since they'll be giving you extra protein. Choose those options over regular non-dairy milk or yogurt.
- Protein powder. I used Naked Nutrition's Almond Powder - this is my go-to for a naturally sweet, neutral flavored, digestion-friendly protein. I love this brand because of how clean there ingredients are. If you're looking for other completely unsweetened protein powder you can try their vegan seed protein powder or even their peanut powder. In the past I've also used Naked's Vegan Vanilla Shake protein powder. I also like the Natreve brand Peanut Butter flavor, and they have a French vanilla flavor that would work well in these oats.

FAQ & Expert Tips
You can add a scoop of your favorite protein powder to these oats for extra protein. I recommend adding 2-4 tablespoons more liquid, per serving of protein.
Because of the almond butter, these oats are naturally quite sweet. But feel free to add some sweetness - you can easily adjust the sweetness level by adding some agave or maple syrup.
Store overnight oats in airtight containers for up to a week.
I find that mason jars make ideal containers for overnight oats. They are a great serving-size and are easily portable if you're taking breakfast on the go
I used almond butter and my vanilla almond granola. Other ideas: banana slices, berries, chia seeds, chopped dates, chocolate chips
