    The beets are tender, tangy and sweet, with a lovely freshness from thyme.

    Why I love these Balsamic Roasted Beets

    • Dietary needs - these beets are vegan, oil-free, gluten-free and refined sugar free.
    • Simple ingredients - besides beets, this recipe features balsamic vinegar, maple syrup, salt, and pepper

    Ingredient Notes & Substitutions

    • Beets: feel free to buy red or yellow beets. Where I live, beets usually come in bunches of three. But feel free to buy more and double or triple the recipe.
    • Balsamic Vinegar: use at least a medium quality balsamic. I find that when roasting, the heat can really bring out the tanginess in a bad balsamic. So look for a mid tier balsamic - it's worth it!
    • Maple Syrup
    • Salt & Pepper
    • Fresh Thyme: for garnish, and a bit of freshness at the end

    Step-By-Step Instructions

    Step 1. Preheat the oven to 400°F.

    Step 2. Wrap beets individually in aluminum foil. Place on a baking sheet and roast for 45-50 minutes, until fork tender. (If you have smaller or larger beets, this could take as little as 40 minutes, or as long as 75 minutes.)

    Step 3. Remove the beets from the oven. Let cool for a few minutes, until they are cool enough to handle. Use your fingers or a paper towel to peel away the skin.

    Step 4. Slice each beet into rounds.

    Step 5. Transfer to a bowl and toss the cooked beets with the balsamic, maple syrup, salt, and pepper.

    Step 6. Return the beets to the oven and roast 10-15 more minutes.

    FAQ & Expert Tips

    Make ahead tips


    1. The beets can be roasted ahead of time. Follow up to step 4. Then on the day you want to serve, continue with step 5.
    2. This entire dish can be prepared ahead of time and reheated. Cook as instructed, then warm in the oven at 300 for 10-20 minutes right before serving.

    Storage

    Store these beets in an air-tight container in the fridge for up to 5 days.
