Banana bread in a bottle! This Banana Simple Syrup is a sweet, rich syrup, perfect for adding banana flavor to coffee, lattes, pancakes, cocktails, and desserts.

This one's for my fellow banana lovers! I know banana isn't everyone's cup of tea but if you love bananas, this is for you! It's like banana bread in a bottle.
I used this syrup for a banana cream matcha, but this syrup would be fab on pancakes or waffles. Drizzled on oatmeal. Even on toast!
My version of banana simple syrup is a bit different than a classic simple syrup. A typical simple syrup is a 1:1 ratio of sugar to water. But to get the banana flavor without using artificial flavorings, we obviously need to use a banana.
So this syrup is a blend of banana, sugar, and water!
I wanted to give the syrup a more rich flavor, so instead of white sugar, I used coconut sugar, which I love for it's caramel-like flavor. Add a pinch of cinnamon and nutmeg and you've got yourself something rich and delightful!

Ingredient Notes & Substitutions
- Banana: choose a ripe banana, that's got some nice yellow and brown. But don't use a banana that's ripe to the point of being mushy. Save those for banana bread!
- Coconut Sugar: I used coconut sugar for a more refined sugar free option and to add a caramel-like flavor. If you don't want to use coconut sugar, feel free to use brown sugar.
- Water
- Cinnamon & Nutmeg: I kept it simple with just these two, but if you want something even more bold, use a small pinch of allspice and a dash of cloves too!

Step-By-Step Instructions
Step 1. Heat a small saucepan over medium heat. Add the banana and use a whisk or wooden spoon to mash the banana into a paste.

Step 2. Add the sugar, water, cinnamon and nutmeg. Stir and bring to a simmer. Let cook 5 minutes.

Step 3. Let the syrup cool a few minutes before transferring to a blender. Blend until smooth. Store in the fridge.

Store in an airtight container in the refrigerator for up to 2 weeks.
Store in an airtight jar in the fridge. I typically use a mason jar or my bitters jars pictured in this post.
This syrup is great for coffee or matcha. It's also an alternative to maple syrup that you can use on pancakes, waffles or oatmeal.
