    Coffee Molasses Baked Tempeh

    Slightly sweet with a deep coffee flavor, this Coffee Molasses Baked Tempeh is a perfect way to add some plant-based protein to your dinner.

    I eat tempeh pretty often -- it's a high-quality source of plant-protein and is fermented (which means it helps keep your gut happy). After a couple weeks of making the same recipe over and over, I'm looking for a change. Don't get me wrong, I love my Crispy Baked Tempeh recipe, but sometimes I want some new flavors.

    So I'm always on the hunt for different marinades to try. Recently, I saw part of an old episode of Good Eats. Alton Brown shared a marinade recipe for some pork he was making.

    I obviously didn't want to use the marinade for pork, but I jotted down the main ingredients to experiment with my own marinade for a plant-based recipe. The result: this delicious dish.

    What is tempeh?

    Tempeh is a block of fermented soy beans. It's a common source of vegan protein. With not a lot of taste and a great texture, tempeh is a great option to pack in a high quality protein.

    Plus, the fermentation is great for your gut!

    Why I love this Coffee Molasses Baked Tempeh

    • Dietary needs - this tempeh is plant-based, gluten-free dairy-free, oil-free, and sugar-free
    • Easy way to get plant-based protein - tempeh is full of plant-protein and this recipe only takes a few minutes of hands on time
    • Unique flavor - coffee and molasses. This combo gives the tempeh a subtly sweet flavor

    Ingredient Notes

    • Tempeh
    • Black Coffee: you can use coffee or espresso
    • Molasses: you could also use date syrup or maple syrup
    • Apple Cider Vinegar: you can sub any white vinegar
    • Spices: garlic powder, onion powder, thyme, salt & ginger

    How to make Coffee Molasses Baked Tempeh

    Step 1. Preheat the oven to 375°F. Line a baking sheet with aluminum foil.

    Step 2. Whisk together the marinade ingredients.

    Step 3. Chop the tempeh into cubes. Pour the marinade over the tempeh and let sit for at least 30 minutes.

    Step 4. Place the tempeh and any remaining liquid on the baking sheet. Bake for 20 minutes, stirring halfway through, until the tempeh is crispy. Enjoy!

    • 1 8 Ounce Block Tempeh
    • ½ Cup Cold or Room Temperature Black Coffee
    • 2 Tablespoons Molasses
    • 1 Tablespoon Apple Cider Vinegar
    • 2 Teaspoons Garlic Powder
    • 2 Teaspoons Onion Powder
    • 1 Teaspoon Thyme
    • ½ Teaspoon Salt
    • ¼ Teaspoon Ginger
