Ingredient Notes & Substitutions
- Brussels Sprouts: I prefer to buy fresh brussels sprouts and trim them myself, but if you want to save time you can buy them pre-shredded
- Grated Carrots: same note as above - I think carrots taste best when you buy them whole and grate them yourself, but buying pre-grated carrots is a great time-saver
- No-Added-Sugar Dried Cherries: it's often hard to find dried fruits without added oils or sugars - they do exist though! If you can't find dried cherries, you could use raisins or currants or another no-added-sugar dried fruit
- Pistachios: either raw or dry roasted pistachios are fine. You can use salted or unsalted.
- White Balsamic Vinegar: white balsamic vinegar is the lighter, milder counterpart of regular balsamic vinegar. It's sweet, yet still has a slight tang and it's perfect for this slaw. You can find it in the same aisle as other vinegars
- Salt & Pepper

- 2 Pound Brussels Sprouts trimmed and sliced thinly (1 ½ Pounds after trimming)
- 1 Cup Grated Carrots
