Ingredient Notes & Substitutions
- Super Firm Tofu: super firm tofu is a vacuum-packed tofu that does not require any pre-pressing - if you like a solid, firm tofu, look for super firm. Extra firm also works - you can press it if you want, or just make the recipe as-is
- Cornstarch: cornstarch helps to give an extra crunch
- Orange Juice: fresh squeezed is best, but this recipe will be fine with a bottled juice
- Maple Syrup: you can sub agave
- Ketchup: you can also use tomato paste
- Liquid Aminos, Tamari, or Soy Sauce: if you're gluten-free, choose tamari or liquid aminos
- Liquid Smoke: don't skip the liquid smoke! It provides the smokiness in this recipe! You can find liquid smoke near the soy sauce in the grocery store.
- Extra Virgin Olive Oil: a bit of optional oil can help get more of a brown on the tofu. The recipe also works totally fine without oil - just pan fry on a nonstick pan!

Step-By-Step Instructions
Step 1. Slice the tofu into 2-3 patties each - I cut each of my blocks in half height-wise, but thirds would work too. Use a pairing knife to cut cross-hatches into one side of each block, being careful not to cut all the way through the patties.

Step 2. In a small bowl, whisk together the sauce.

Step 3. Heat a large skillet. Add the oil, if using. Add the tofu to the pan and cook 3-5 minutes per side, until lightly browned.

Step 4. Once your tofu is initially browned, begin brushing on the glaze. Brush on 2 tablespoons of glaze at a time, and cook for 2 minutes per side. Flip, add more glaze and cook another two minutes. Repeat several times until all the glaze is used. Serve and enjoy!

FAQ & Expert Tips
When using extra firm tofu, I prefer making this recipe with tofu that hasn't been pressed - it has a lighter texture that compliments the heavier texture of the breadcrumbs.
You definitely can press the tofu if you want.
Or you can use a super firm tofu that doesn't require any pressing.
For the crispiest results when reheating tofu, place back in the oven at 350°F or an air fryer at 300°F and heat for a few minutes until warm. Otherwise, just microwave!
Store the tofu the refrigerator. Leftovers will last in the fridge for 5-7 days.
