Stuffed Orange Bell Peppers with Lotus Foods Organic Forbidden Rice are a fun and spooky Halloween dinner. Create a Jack-O-Lantern by carving a face into your bell pepper and stuffing it with a rice and black bean mixture.

I usually am not a huge fan of Halloween celebrations. I have nothing in particular against Halloween, but I don't like to dress up and I don't love that the secular holiday consists of giving children an extremely unhealthy amount of candy.
BUT.
When Lotus Foods asked me to make this Halloween Jack-O-Lantern Stuffed Pepper recipe, I have to admit, I got pretty excited.
I mean, these jack-o-lanterns are so cute. I had such a fun time carving different faces into each of the peppers. And then when you stuff them with Lotus Food's Forbidden rice they really come to life like a real jack-o-lantern.

Why I love this Halloween Stuffed Pepper Recipe
- Dietary needs - these stuffed peppers are plant-based, gluten-free, dairy-free, oil-free, and sugar-free
- SO CUTE - I've never had so much fun making dinner. These lil peppers are the most adorable jack-o-lanterns
- Still nutrient-dense - even though these peppers are festive they still pack a nutritional punch. Deep blue/purple/black colored foods are rich in antioxidants, a great reason to reach for the black rice and the black beans instead of white

Ingredient Notes
- Orange Bell Peppers: for a true pumpkin look, reach for the orange bell peppers. Though you can make this recipe with any colored pepper
- Lotus Foods Forbidden Rice: this is the beautiful black rice that gives the jack-o-lanterns their glow!
- Yellow Onion: you can also use a white or red onion
- Black Beans: black beans add some protein and fiber to the dish. To stick with the black theme, I recommend using black beans or black lentils
- Spices: garlic powder, salt, chili powder, parsley

How to make Halloween Stuffed Peppers
Step 1. Preheat the oven to 425°F.
Step 2. In a medium pot, cook the rice according to the package directions.

Step 3. Slice the top off of each pepper and scoop out the seeds. Use a paring knife to cut out a jack-o-lantern face onto the side of the pepper.

Step 4. Arrange the peppers in a baking dish and bake in the oven for 15 minutes.

Step 5. In a small pan, sauté the onion, using a splash of water if the onion starts to stick. Cook 5-7 minutes, until soft.

Step 6. Stir in the black beans, garlic powder, salt, and chili powder. Cook a few minutes to warm the beans.

Step 7. When the rice is cooked, stir in the bean mixture.

Step 8. Divide the mixture evenly between all the peppers. Sprinkle with parsley, if desired. Serve and enjoy!

Halloween Jack-O-Lantern Stuffed Peppers

- 6 Large Orange Bell Peppers
- 2 Cups Lotus Foods Forbidden Rice dry
- 1 Large Yellow Onion sliced
- 1 15 Ounce Can Black Beans drained and rinsed
- 1 Tablespoon Garlic Powder
- 1 Teaspoon Salt
- ½ Teaspoon Chili Powder
- 2 Tablespoons Chopped Parsley
Instructions
