Make Oat Milk Rice Pudding for a dairy-free alternative to the traditional recipe. Oat milk creates a rich, sweet flavor in the pudding and pairs perfectly with sweet spices like cinnamon and nutmeg.

Rice pudding is like the sweet cousin to risotto. Risotto is a savory dish whereas rice pudding is a sweet dessert. When selecting a milk to make a dairy free rice pudding, oat milk is an ideal choice.
Even unsweetened oat milk is slightly sweet because oats themselves are sweet. Which lends itself to creating a rich flavor for the rice pudding.

Rice pudding made with oat milk is surprisingly similar to rice pudding made with dairy milk. I've found that the method can be exactly replicated. Ingredient Notes
- Oat Milk: oat milk is the creamiest and tastiest option. Ideally, use an unsweetened oat milk so you can control the sweetness level of the pudding.
- Arborio Rice: For the most creamy rice pudding use arborio rice. Arborio rice is known for its ability to thicken, which will lead to a delightful pudding. If you can't find arborio rice, you can use another white rice, and I've even had success with brown rice. Cook times differ among types of rice, so be sure to check the rice frequently when cooking to avoid over or undercooking.
- Vanilla
- Kosher Salt
- Cinnamon & Nutmeg: These are warming spices that give a sweet, nutty flavor to the pudding.
- Maple Syrup: Rice pudding is a slightly-sweet dessert, so we'll want to include some type of liquid sweetener. I used maple syrup in this recipe, but if you'd like a fruit sweetened option feel free to use date syrup instead.
- Raisins: raisins are a traditional topping for rice pudding. You can also choose another dried fruit or leave out the fruit entirely.

How to make Oat Milk Rice Pudding
Step 1. In a large saucepan or pot, stir the oat milk, rice, vanilla, salt, cinnamon, and nutmeg. Bring to a boil. Then turn the heat to low and simmer for 20-30 minutes, until the rice is tender. Stir occasionally to prevent sticking.

Step 2. Remove from the heat and stir in the maple syrup and raisins.

Step 3. Serve warm or chill for 30-60 minutes and serve cold. Enjoy!

FAQ & Expert Tips
Enjoy rice pudding hot or cold. It's delicious either way!
If you don't like raisins, stir in your preferred dried fruit like cranberries or apricots. You can also top the pudding with nuts like pistachios, almonds, or walnuts. Or if you're feeling fancy, top with jam or chocolate chips.
If you'd like to reheat your rice pudding you can microwave it or warm it on the stove. You may want to stir in a few tablespoons of oat milk to keep the creamy consistency.

Hi! So glad you enjoyed this rice pudding! Yes, you can scale up the recipe - for 4-6 I would double the recipe. The cook time will increase slightly. It will take a bit longer to boil, and I'm guessing you'll be closer to the 30 minute mark for the simmer. Just give a quick taste test to make sure the rice is cooked. Let me know how it goes!
