    Why this recipe works

    Piña coladas are blended drinks, so you don't need to buy expensive fake liquors to get the texture and ratios of this drink right.

    The mocktail version of a piña colada is like a fancy pineapple smoothie. But it still has the flavors of an alcoholic beverage thanks to a bit of rum extract and a tablespoon of molasses.

    Why molasses?

    The America's Test Kitchen version of alcohol-free rum uses molasses as one of the primary flavors to imitate rum. And instead of going through an entire process to make a fake rum, we can just add some molasses to help create the rum flavor.

    Why I love these Piña Colada Mocktails

    • No Alcohol - of course! It's a mocktail, so there's no alcohol at all. If you want to make these as mocktails and add alcohol later, I have suggestions below
    • Great for kids and adults - this drink is like a fancy pineapple smoothie, so it's perfect to serve when kids are around, yet adults will still recognize the classic piña colada flavor profile
    • Dietary needs - besides being alcohol-free this drink is plant-based, oil-free, gluten-free, and totally sugar-free
    • Fruity and summery - pineapples just scream warm weather and tropical vibes - great for a hot summer day‍
    • Actually pretty healthy - yep, this mocktail is kind of like a fruit smoothie, just with a piña colada flair

    Ingredient Notes & Substitutions

    • Ice: I usually don't add ice to regular fruit smoothies, but for a mocktail ice is necessary to get that perfect piña colada texture
    • Frozen Diced Pineapple: you can buy frozen pineapple or get a fresh pineapple and freeze it ahead of time
    • Pineapple Juice: pineapple juice is easy to find in the juice aisle. You could also juice a pineapple or use leftover liquid from a can of pineapples (be sure to use pineapple juice, not syrup from the can)
    • Coconut Milk: traditional piña coladas use cream of coconut, a sweetened coconut milk - these are full of sugar and other processed ingredients, so I recommend using coconut milk from the and adding maple syrup if you need extra sweetness
    • Lime Juice: fresh lime juice is best, especially for cocktails
    • Molasses & Rum Extract: these ingredients create a rum flavor that you would get from using actual rum in your cocktail. Both ingredients are easily found in the baking aisle
    • Pinch Salt
    • Pineapple Slices: optional, for garnish.

    How to make Piña Colada Mocktails

    Step 1. Add the ice, pineapple, pineapple juice, coconut milk, molasses, rum extract, and salt to a blender. Blend until smooth.

    Step 2. Pour into two glasses and garnish with sliced pineapple. Enjoy immediately!

    FAQ & Expert Tips

    No blender option

    No blender? If you have a food processor or immersion blender you can still make this recipe work. Let the pineapple thaw until it is fairly soft but still slightly frozen.

    If using a food processor, follow the directions as listed, using the food processor instead.

    For an immersion blender, place the pineapple in a large bowl and use the immersion blender to puree the fruit. Then add in the remaining ingredients.

    Add alcohol

    By the glass: pour the pineapple mixture into a glass then stir in 1.5oz of rum.
    For the whole batch: add 3oz of rum to the blender before blending.

    Storing Leftover Piña Colada Mocktails

    If you double or triple this recipe, you may have some left over.

    This mocktail freezes very well, just like a smoothie! Simply place it in a freezer-safe container (I use a zip top bag) and freeze.

    To thaw, defrost in the microwave or let the mixture sit out at room temperature for a few minutes. Then place in the blender and blend until the mixture is a drinkable texture.
