    Rainbow Chard with Vegan Honey Mustard Dressing

    Oil-Free Sauteed Rainbow Chard

    A couple weeks ago I went to the farmers market and found this BEAUTIFUL rainbow Swiss chard. I wasn't planning on buying chard, but it was so gorgeous that I couldn't resist. I mean seriously, look at it.

    Wow, God's creation is soo good. He even made vegetables look beautiful. I am constantly amazed by Him. He just shows up in the little places. Like on a Saturday morning at the farmers market. I wasn't looking for Him but He there He was. I had no recipe planned, but I knew I could make something delicious with this gift God gave me. So I bought a bunch.

    When I got back to my apartment, I started brainstorming. Chard is similar to spinach or kale, so I decided to sauté it.

    Greens can get kind of boring by themselves, so I created a Vegan Honey Mustard Dressing to go with. The result: a fresh, colorful plate with tons of flavor.

    What is Rainbow Chard?

    Chard is a leafy green vegetable - it's in the beet family, but you eat the greens like you do with spinach or kale.

    Rainbow chard is a mixture of regular swiss chard, red chard, and golden chard. Together, they make a beautiful rainbow bunch.

    Along with the leaves, the stems are completely edible. That's a good thing! We get to eat the beautiful rainbow of colors. More colors = more antioxidants.

    Why I love this Easy Sauteed Rainbow Chard

    • Dietary needs - this chard recipe is vegan, gluten-free, dairy-free, oil-free, and sugar free
    • Super easy side - sauté up some chard for a simple and very healthy green side dish
    • Beautiful rainbow colors - I don't know about you, but I love when the food I'm eating is beautiful and colorful. Rainbow chard definitely falls into that category
    • Literally so quick - this chard only takes about 10 minutes to cook

    Ingredient Notes

    • Rainbow Chard: chard is seasonal and you'll most likely find it in your grocery store in the spring. BUT you can make sauteed greens year round using spinach or kale instead.

    • Vegan Honey Mustard Dressing

    How to make Oil-Free Sauteed Rainbow Chard

    Step 1. Remove the leaves of the chard from the stems. Dice the stems and roughly chop the leaves. Rinse well.

    Step 2. Sauté the stems in a nonstick pan on medium heat for about 5 minutes. The chard will be wet from the rinse, but if necessary, use a couple tablespoons of water or vegetable broth to keep them from sticking.

    Step 3. Add the leaves to the pan. Cook 5 minutes more.

    Step 4. Meanwhile, make a batch of vegan honey mustard dressing.

    Step 5. Remove from the heat. Plate, and drizzle with the vegan honey mustard dressing. Enjoy!
