    Roasted Beet Apple Smoothies are a great way to eat your veggies! With a beautiful pink hue, you'll have SO much fun diving into these smoothies.

    It's mid-September - it's basically fall but it's still so hot outside. How do you eat all the fall foods while its still sweltering out?? Make a fall smoothie of course!

    Roasted Beet Apple Smoothies

    Beets and apples are some of the most classic fall foods. Throw them into a smoothie and you've got yourself a delicious fall dish that's still heat-appropriate.

    Now beets tend to have a pretty intense flavor, especially if you eat them raw. If you roast the beets you still get their great color and nutritional benefits, but you tone down the earthy flavor just a bit and enhance their natural sweetness. Perfect for a smoothie. You can definitely still taste the beets, but instead of being overpowering they add a subtle earthy sweet flavor that compliments the other ingredients very well.

    Add some cinnamon to the mix and this smoothie starts to scream fall!

    Why I love these Beet Apple Smoothies

    • Dietary needs - these smoothies are dairy-free, plant-based, oil-free, gluten-free, and sugar-free.
    • Nutrient dense - made with fruits and veggies these Roasted Beet Apple Smoothies are very high in fiber as well as other micronutrients
    • Beautiful color - I mean, come on, who doesn't want to eat a gorgeous magenta smoothie?!

    Ingredients

    These smoothies only have a few simple ingredients.

    • Beets: The star of the show! Red beets create a beautiful pink hue in these smoothies.
    • Bananas: These smoothies don't have any ice - instead we'll use frozen bananas. They add tons of sweetness and make the smoothie nice and thick.
    • Apples: I used gala apples for this smoothie but you can choose your favorite variety. A tarter apple could add a nice bite to an otherwise sweet smoothie.
    • Vegan Yogurt: For creaminess. There is yogurt blended into these smoothies and I also added some to the top of my glass. It was the perfect extra burst of creamy texture. I used coconut yogurt for this recipe (which adds even more sweetness).
    • Cinnamon: For extra sweetness, and, of course, fall vibes.

    How to make Roasted Beet Apple Smoothies

    Step 1. Simply add all the ingredients to a blender or food processor. Blend until smooth. Top with additional yogurt, if desired. Enjoy!

    How to Roast Beets

    Step 1. Preheat the oven to 400.Trim the tops and bottoms off of the beets. Wrap each beet in aluminum foil.
    Step 2. Place on a baking sheet and roast for 60 minutes, or until the beets are fork tender. Let cool.

    Selecting a Vegan Yogurt

    There quite a few options for vegan yogurt these days. And many of them have probiotics added, so you get all the benefit of dairy yogurt without the IGF-1 and other hormones found in dairy products.

    When selecting a vegan yogurt be sure to look for one with minimal preservatives. There are many brands that claim to be healthy vegan yogurt but when you look at the ingredient list you have no idea what half of the things are. That's not ideal.
    The best yogurt is only a few ingredients: the base (i.e. coconut, cashew, almond), water, and a probiotic.

    If you see any gums, preservatives, etc. try to find a different brand.

    Also, as with dairy-based yogurts, watch for added sugars. Look for a no-added sugar version.
