    Tofu Apricot Skewers

    Tofu Apricot Skewers are a delicious combo of high-protein tofu, and sweet juicy apricots. The tofu is covered in herbs that make this dish fresh and flavorful - perfect for summer!

    If you hate tofu this recipe is for you. You can eat a cube of tofu and a piece of apricot in every bite!

    Plus, this tofu is covered in a delicious marinade, so it's pretty flavorful by itself. With ton of herbs, along with sweet maple syrup and acid from the lemon juice it's got a fantastic flavor.

    The tofu gets nice and crispy on the grill and the apricots get super soft and sweet. OR, if you don't want to grill/don't have a grill you can bake the skewers in an air fryer or oven.

    Ingredient Notes

    • Extra Firm Tofu: Firm tofu is the key to making sure your skewers stay intact.
    • Apricots: It's totally okay to use firm apricots here, since they'll get soft on the grill.
    • Marinade: Vegetable Broth, Apple Cider Vinegar, Minced Garlic, Maple Syrup, Lemon Juice, Dried Parsley, Died Thyme, Dried Rosemary, Salt & Pepper.

    How to make Tofu Apricot Skewers

    Step 1. Press the tofu for 10 minutes using a tofu press or heavy object.

    Step 2. In a large bowl, add all ingredients except tofu and apricot. Whisk together.

    Step 3. Chop the tofu into 1" pieces. Stir the tofu into the herb mixture and let marinate for an hour.

    Step 4. Preheat the grill or set the air-fryer to bake at 350°F.

    Step 5. Remove tofu from marinade. Skewer on a piece of tofu, then ¼ of an apricot. Repeat until the tofu and apricots are used up.

    Step 6. Place the skewers on the wire rack of the air fryer or on the grill. Cook for 6-10 min.

    Ingredients

    • 1 14 Ounce Block Extra Firm Tofu
    • 4 Medium Apricots cut into fourths
    • 4 Skewers metal or wooden (wooden should be soaked in water 15-30 min.)

    Marinade

    • 1 Tablespoon Vegetable Broth
    • 1 Tablespoon Apple Cider Vinegar
    • 3 Cloves Garlic minced
    • 1 Teaspoon Maple Syrup
    • Juice of a Lemon
    • 1 Teaspoon Dried Parsley
    • 1 Teaspoon Died Thyme
    • ½ Teaspoon Dried Rosemary chopped
    • Salt & Pepper to taste

    Instructions

    • Press the tofu for 10 minutes using a tofu press or place under a heavy object.
    • In a large bowl, add all ingredients except tofu and apricot. Whisk together.
    • Chop the tofu into 1" pieces. Stir the tofu into the herb mixture and let marinate for an hour.
    • Preheat the grill or set the air-fryer to bake at 350°F.
    • Remove tofu from marinade. Skewer on a piece of tofu, then ¼ of an apricot. Repeat until the tofu and apricots are used up.
    • Place the skewers on the wire rack of the air fryer or on the grill. Cook for 6-10 minutes until the tofu is starting to crisp on the outside.
