There's less rolling, less mixing, less baking, and less waiting for the pie to set. A galette is quicker and easier than a pie. And it has all the same flavors!

What is a galette?
Galette is a French term. It describe a flat, round, freeform cake or pie.
Many Galettes are made with a pie crust that is folded over a fruit filling. They are so easy to make and are quicker than pies!
This vegan apple galette is a plant-based version of the classic French recipe, featuring my wfpb and gluten free pie crust and a super simple apple filling.

Why I love this Vegan Apple Galette
- Dietary needs - this galette is vegan, eggless, gluten-free, dairy-free, oil-free, and refined sugar free. That's right! No vegan butter, no white flour, no sugar, AND made with whole foods.
- REALLY quick filling filling - just slice your apples and brush them with a mixture of maple syrup and spices!
- Easy gluten free pie dough that works just like a regular crust. - For the longest time I thought it would be impossible to create a pie crust that acts like a store bought crust that uses butter and sugar. Turns out, I was wrong. The secret ingredient, water, is the key to getting a workable crust.
- Quicker and easier than a pie - galettes are like pie's easier cousin. You only need to roll out one crust, then you just quickly top with the fruit and bake! My pie recipes are pretty easy, and this galette is even easier!

Ingredient Notes & Substitutions
Crust Ingredients
- Oat Flour: sometimes I recommend using homemade oat flour in my baked good recipes. I don't recommend it for this pie crust - you want a fine flour to create a smooth and sturdy dough - so, opt for store bought. That said, homemade oat flour will still work, the crust will just have a coarser texture
- Salt: be sure to use fine table salt
- Nut Butter: This is the fat source that is replacing the butter (or vegan butter) you would find in a traditional pie crust. I use cashew butter because it has the most neutral tasting flavor. You can also use almond butter.
- Maple Syrup: a pie crust needs a bit of sweetness, so instead of sugar we'll use maple syrup. I don't recommend substituting date syrup in this crust, or else the dough will be too sticky
- Water: water brings the dough together. Cold water is ideal, but room temperature water is fine.

Filling Ingredients
- Granny Smith Apples: granny smiths are great baking apples because they are not too sweet and they hold up well in the oven. Feel free to leave the peels on for more fiber!
- Maple Syrup: we'll brush on a maple syrup mixture to add a sweetness to the apples. To keep this recipe completely fruit sweetened you can use date syrup instead.
- Cinnamon & Nutmeg: these are two of the classic apple pie spices, and they add a lovely richness to the apples
- Salt: I always add a bit of salt, even in a part of the recipe that is supposed to be very sweet because salt helps enhance other flavors

Topping Ingredients
- Soy Milk + Agave: the mixture of soy milk and agave creates a vegan egg wash, which allows the crust to turn golden and develop a nice shine. I have tried this egg wash with maple syrup and it is okay, but agave works best. Soy milk is necessary because of the protein, so don't use a different non-dairy milk.
- Turbinado Cane Sugar: a bit of coarse sugar to sprinkle on top adds a nice touch to the crust. To keep this galette refined sugar free, omit the sugar. (The sugar does not affect how the crust bakes.)

How to make this Vegan Apple Galette
Step 1. Preheat the oven to 350°F. Line a baking sheet with parchment paper.
Step 2. Make the crust. In a large bowl whisk together the oat flour and salt. Add the nut butter and maple syrup and use a fork to incorporate. Add the water and mix until a dough forms.

Step 3. Place the dough in between two sheets of parchment paper roll into a 12" circle (the circle doesn't have to be perfect). Set aside.

Step 4. In a small bowl mix the maple syrup, cinnamon, nutmeg, and salt.

Step 5. Peel (if desired) and core the apples. Cut the apples in half then slice very thinly. Fan them out slightly.

Step 6. Place the crust on the prepared baking sheet. Arrange the apples in the center of the crust, leaving a 1-1.5" border. For best visual results try to arrange the apples "randomly" and fill in any empty spaces with smaller apple pieces.

Step 7. Brush the apples liberally with the maple syrup mixture.

Step 8. Fold in the sides of the crust. If any part of the crust breaks, just press it back together.

Step 9. In a small bowl, whisk together the soy milk and agave to create a vegan egg wash.

Step 10. Brush any exposed dough with egg wash and sprinkle with sugar.

Step 11. Bake for 30-40 minutes, until the crust is golden brown and the apples are soft.

Step 12. Let cool briefly, then serve immediately. Enjoy with ice cream!

Serving Suggestions
The classic way to serve your galette is with a scoop of ice cream on top!

FAQ & Expert Tips
Thinner slices will allow the apples to get nice and soft in the oven. It also creates a prettier design!
To make the pie crust nut-free use tahini or sunflower seed butter instead of nut butter.
Tahini and sunflower seed butter have a stronger flavor than cashew or almond butter, so you may notice a more earthy flavor in the crust.
This galette will work with other fruits besides apples! A fruit that is sliceable, like peaches, is ideal. But feel free to make this galette with berries too - just toss the berries in the maple syrup mixture before adding them to the crust
Store this vegan apple galette covered in the fridge for up to a week.
I do not recommend freezing this galette.

- I used a marble rolling pin, similar to this one to roll out the dough.
- Pastry brush for the egg wash.
- My favorite mixing bowls.
- And plenty of parchment paper.
