I have several buffalo recipes on my site: buffalo tofu poppers, buffalo cauliflower, even a vegan buffalo chicken dip! I have enjoyed making these at football parties for friends and family over the years.
And now I'm adding vegan chicken wings to the rotation!
These vegan buffalo seitan wings use my no-boil seitan chicken, formed into wing shapes, as the base. Then the wings are pan-cooked and tossed in buffalo sauce.
Make sure to serve with vegan ranch, because these guys are spicy!!

Ingredient Notes & Substitutions
- Vital Wheat Gluten: the ingredient that packs all the protein! Vital wheat gluten is available in the baking aisle near other types of flour.
- Nutritional Yeast: nutritional yeast is a spice that has a cheesy flavor. The chicken don't taste cheesy but the nutritional yeast helps create a deeper flavor
- Spices: poultry seasoning, basil, onion powder, garlic powder, paprika, and chili powder.
- Water: water helps create the right texture
- Soy Sauce, Tamari, or Liquid Aminos: any of these three will work to add some salt
- Ketchup: look for a no-added sugar ketchup
- Liquid Smoke: this is my secret ingredient in many meat recipes that I turn vegan. Liquid smoke adds a smoky flavor and helps deepen the overall flavor of the chicken. Find liquid smoke in the grocery store near the condiments
- Vegan Buffalo Sauce: look for a vegan or dairy free buffalo sauce. My favorite brand is noble made, which offers several dairy-free buffalo sauce options in different heat levels. Their mild sauce is plenty spicy for me and is my go-to.
- Extra Virgin Olive Oil: optional for pan-frying

Step-By-Step Instructions
Step 1. Preheat the oven to 350°F. Line a baking sheet with parchment paper.
Step 2. In a large bowl mix together the vital wheat gluten, nutritional yeast, poultry seasoning, basil, onion powder, garlic powder, paprika, and chili powder.

Step 3. Add the water, soy sauce, ketchup, and liquid smoke. Mix, using a fork until mostly combined, then switch to your hands, to help the mixture form into a large ball.

Step 4. Shape the mixture into a long log, 2 inches in diameter, and then use scissors or a sharp knife to cut the mixture into wing shapes. You can pinch one end of each wing to create a drumstick shape. Place on the parchment lined baking sheet. Bake for 25-30 minutes, until internal temperature reaches 165°F.

Step 5. When the wings are out of the oven, heat the oil, if using, in a large skillet over medium high heat. Add half of the wings and cook for 3-5 minutes to brown. Toss in half the buffalo sauce to coat. Remove from the pan and repeat with the other half of the wings and sauce. (You may need to do a few batches, depending on the size of your pan.)

Step 6. Serve with celery, carrot sticks, crackers, and vegan ranch or blue cheese dressing.

Pro Tip: to prep ahead and prevent sogginess, keep wings warm in a 200°F oven
FAQ & Expert Tips
Yes! You can toss in buffalo sauce and return to the oven for another 10-15 minutes. Or toss in the air fryer at 350°F for another 5-10 minutes.
The seitan chicken itself is not spicy at all, so it depends on your buffalo sauce. I prefer Noble Made's Mild buffalo sauce, which is plenty spicy for me. Adjust to your taste.
Yes! A couple options:
Option 1: Make just the chicken ahead of time, then pan-fry or bake as instructed above a few minutes before serving.
Option 2: Make a day or two before and reheat in a 300°F oven for 15-20 minutes.
Option 3: Make the wings a few hours before and keep warm in a 200°F oven
Vegan ranch, vegan blue cheese, or even chipotle ranch if you're feeling extra spicy.
Freeze cooked, unsauced seitan wings up to 6 months. Reheat and sauce when ready to serve!
Store in an airtight container for up to a week. Reheat leftovers in the microwave or as instructed above.
