Vegan Chicken Teriyaki is a savory-sweet dish featuring vegan chicken glazed in a teriyaki sauce. This 20 minute dish is the perfect high protein weeknight meal.

Teriyaki is on my weekly meal rotation. Here's why.. it's:
- Actually quick enough for a weeknight. We're talking 20 minutes max.
- Really easy. Minimal chopping. Nothing complicated.
- Perfect for loading up on veggies. I just served this vegan chicken teriyaki with broccolini, but usually I'm adding broccoli, carrots, cucumber, and spinach!
- Protein packed. Whether you're making it with tofu, tempeh, seitan beef, a chicken version like this one - seitan or store bought - there is plenty of protein
With all the variety. I never get tired of teriyaki!
This is my vegan chicken teriyaki. It's made with my seitan chicken or your favorite store-bought chicken (I like Abbot's).
I love cooking with seitan specifically because it is LOADED with protein. So this teriyaki truly packs a punch with the protein.

Why I love this Vegan Chicken Teriyaki
- Dietary needs - this teriyaki is dairy-free, plant-based, oil-free, and sugar-free
- High protein - this dish uses seitan, which is made from vital wheat gluten, and contains a large amount of protein!
- Delicious sauce - my teriyaki sauce is full of sweet, salty flavor

Ingredient Notes & Substitutions
- Seitan Chicken: I used my homemade seitan chicken, which has flavors that mimic chicken. You can also use a store-bought vegan chicken like Abbot's or Daring. Or head to my tempeh teriyaki or tofu teriyaki recipes for gluten-free options.
- Teriyaki Sauce: in my other teriyaki recipes I used my WFPB teriyaki sauce, which would work great in this recipe. For this version though, I used Soy Vay teriyaki sauce.
- Rice: I recently got a rice cooker and I've been loving it! If you've been considering, this is your sign to get one.
- Vegetables: I used broccolini here, but feel free to use whatever you want/have. I often make this recipe with frozen broccoli. I'll grate up some carrots and slice cucumber for even more veg.
- Sesame Seeds: for garnish

Step-By-Step Instructions
Step 1. Heat a large skillet over medium heat. Add the seitan chicken and teriyaki sauce. Cook 5-7 minutes until warm and just starting to brown. **If you are using store-bought chicken, sauté the chicken according to the package instructions before adding the teriyaki sauce.

Step 2. Meanwhile, heat the oil another large skillet over medium heat. Add the broccolini and cook or a few minutes to brown. Then add 3 tablespoons of water, cover and steam for 5 minutes, until soft.

Step 3. Serve the chicken and broccoli over rice. Garnish with sesame seeds.

FAQ & Expert Tips
Teriyaki is a cooking technique. It's a method of grilling or frying vegetables or proteins in a glaze. The glaze is usually made of soy sauce, mirin, and sugar.
Yep! If you'd prefer to use tofu head over to my teriyaki tofu bowl recipe. If you like tempeh, head to my teriyaki tempeh recipe. Or, feel free to sub your favorite protein into any of these teriyaki recipes.
I often use microwave broccoli for an even quicker option. I'll also grate some carrots and slice cucumbers. You could sauté peppers or water chestnuts. Or microwave a bag of stir fry veggies.
Store any teriyaki leftovers in the fridge. They will last for up to a week.

- ½ Cup Teriyaki Sauce I used Soy Vay teriyaki sauce; you can try my homemade WFPB teriyaki sauce
