This Vegan Garlic Bread features a crusty baguette and garlic-herb spread, toasted until golden and flavorful. Gluten-free and oil-free options.

I recently got a request to make garlic bread to go with my lentil bolognese. After making lasagna and craving garlic bread to go with it, I knew I needed a solid garlic bread recipe.
Of course, you can use vegan butter to make garlic bread, which I have in the instructions below, but I also wanted to give an option that could oil-free and/or gluten free.
So I did some research and testing: canned coconut milk and vegetable broth both work great as butter substitutes!
This garlic bread is delicious any way you make it - butter or not!

Why this recipe works
Classic garlic bread involves a paste of garlic and softened butter. The butter basically serves as a liquid vessel to spread the garlic and help soften the bread.
The oil-free options for this recipe, using either coconut milk or vegetable broth, both do the same thing to the bread as the butter. They soften it slightly and help distribute the garlic.
The coconut milk option has fat from the coconut milk, which gives a slightly richer flavor, more similar to butter. But broth works just the same.
After making all three versions at one time, I packaged them up mixed together and could not tell the difference between the three options when I heated up leftovers.

Why I love this Vegan Garlic Bread
- Oil-free options - coconut milk and vegetable broth are both great substitutes. You can't tell there's no oil
- Gluten-free options - there are several great gluten-free and vegan baguette options. The recipe works the same whether you have regular bread or gf
- Easy side - garlic bread is a classic and super easy side option for your favorite pasta dish

Ingredient Notes & Substitutions
- Baguette: I used two smaller baguettes. One larger baguette would also work. See recipe card below for gluten-free options.
- Vegan Butter OR Coconut Milk OR Vegetable Broth: the cleanest ingredient vegan butter is Miyoko's brand, which is what I recommend here. You can also use canned coconut milk or vegetable broth. As I describe above, both coconut milk and vegetable broth are great substitutes, you likely won't even taste the difference - I didn't!
- Garlic: fresh garlic is necessary for garlic bread! My recipe calls for quite a bit, to get a nice garlicky kick!
- Parsley: this is technically optional, but I think garlic bread needs parsley for that bit of freshness and depth of flavor. I highly recommend including it.
- Salt & Pepper: even if your butter is salted, I would still add some salt. If you are choosing the coconut milk or vegetable broth option, salt is necessary

Step-By-Step Instructions
Step 1. Preheat the oven or air fryer to 350°F.
Step 2. In a small bowl, mix the butter (or broth or coconut milk), garlic, parsley, salt, and pepper.

Step 3. Slice the baguette in half lengthwise.

Step 4. Spread the mixture evenly on both sides of the baguette.

Step 5. Place the two halves of the baguette back together and wrap the entire baguette in foil.

Step 6. Place on a baking sheet (to catch any leaks) and bake for 10-12 minutes until warm and toasted. Unwrap and turn the butter side face up, broil for 2-3 more minutes.

FAQ & Expert Tips
I like to store garlic bread in the foil I baked it in. You can also keep it in an air tight container. Always store in the fridge.
For best results, reheat garlic bread in the oven or air fryer. Heat the oven/air fryer back to 350 and warm the garlic bread for 5 minutes, until warm again.

Hello, if making this recipe with the vegetable broth, how would you do it in the air fryer? How long and not wrapped in foil?

Hi Becky - you can still wrap in foil in the air fryer! I would start with 5-8 minutes wrapped, and still do 2-3 minutes unwrapped. If you wanted to do it entirely unwrapped, I'd say 5 minutes - you'll just have to watch for the top getting too toasty.
