Vegan Gluten Free Split Pea Soup is a plant-based version of the classic recipe. With tender split peas, aromatic herbs, and sweet, smoky undertones, this vegan split pea soup will be a healthy, staple recipe you actually enjoy!

This is not your typical split pea soup. I've found that many people don't like split pea soup because it's soft and mushy. The result of cooking the split peas for an hour and a half or more, so they completely disintegrate.
Good news: you don't have to cook this vegan gluten free split pea soup for endless hours AND it won't be mushy.

Why I love this Vegan Gluten Free Split Pea Soup
- Dietary needs - this recipe is plant-based, oil-free, gluten-free, dairy-free, and sugar-free
- Simple ingredients - there are only a few basic ingredients in this soup. Nothing weird or hard to find!
- Thick and creamy - this soup is simultaneously creamy and chunky. The split peas break down slightly to create a creaminess but remain intact along with the onions, carrots, and potatoes, so you're actually chewing something
- Protein rich - split peas are packed with plant-based protein. One serving of this soup has about 20g of protein!

Ingredient Notes & Substitutions
- Yellow Onion: I prefer a yellow onion in this recipe but a red or white onion would be fine too
- Garlic: I call for five cloves of garlic in this recipe - this adds plenty of garlic flavor and since the garlic is cooked, it isn't too overwhelming
- Maple Syrup & Liquid Smoke: most split pea soup recipes have ham. To mimic the flavors of ham or ham bone, I added the combination of maple syrup and liquid smoke, for that sweet, smoky ham flavor
- Herbs: parsley & thyme. I call for dried herbs, because they are easily accessible in the winter, but fresh herbs work well too.
- Salt & Pepper
- Green Split Peas: you can find dry split peas in the rice/beans section of the grocery store
- Carrots
- Celery
- Yukon Gold Potato: Yukon gold potatoes are ultra soft & creamy, but a russet potato would work here too
- Vegetable Stock: I prefer the kitchen basics brand because it doesn't have any added sugars or preservatives
- Bay Leaf

How to make Vegan Split Pea Soup
Step 1. In a large pot sauté the onion for 5-7 minutes, until soft. Use a splash of vegetable broth if the onion starts to stick.

Step 2. Add the garlic, maple syrup, parsley, thyme, liquid smoke, salt, and pepper. Cook 1 minute.

Step 3. Add the split peas, carrots, celery, potato, vegetable stock, and bay leaf.

Step 4. Cover, bring to a boil, and simmer for 25-30 minutes, stirring occasionally, until the split peas are tender.

Step 5. Discard the bay leaf.

Step 6. Serve. If desired top with coconut bacon or serve with crusty bread.

- 1 Bay Leaf
Instructions
