Ingredient Notes & Substitutions
- Kale: use a head of kale, not baby kale.
- Apples: I used gala apples. Any red, sweet apple will work! Red delicious would be especially delicious and crunchy.
- Plant-Based Mayo: I used my recipe for homemade mayo, but if you're okay with some oil, you can use a store-bought vegan mayo
- Maple Syrup: for a completely fruit-sweetened slaw use date syrup instead
- Dijon Mustard
- Salt & Pepper

How to make this Vegan Kale Apple Slaw
Step 1. In a small bowl, whisk the mayo, maple syrup, Dijon, salt, and pepper.

Step 2. Place the kale in a large bowl and pour on the dressing. Massage the kale using your hands for several minutes until the kale is soft and slightly wilted.

Step 3. Toss in the apples. Serve immediately.

FAQ & Expert Tips
Massaging the kale helps break it down so it isn't as tough and bitter. After a few minutes the kale becomes softer and more mild, so it's easier to eat raw.
Cut apples can go bad quickly. To keep as fresh as possible, sprinkle with some fresh lemon juice and tightly with plastic wrap or a right-size container.
Use my homemade plant-based mayo instead of a processed store-bought mayo.

- 1 Head Kale finely chopped
- 2 Apples diced
- ¼ Cup Plant-Based Mayonnaise I used my WFPB Mayo
- 1 Tablespoon Maple Syrup
- 1 Tablespoon Dijon Mustard
- ½ Teaspoon Salt
- ¼ Teaspoon Pepper
Instructions
