What is Mongolian beef?
Mongolian beef is a dish from Taiwan. It features sliced beef paired with scallions. And is tossed in a mild spice level brown sauce. The dish is typically served over steamed rice.
This vegan version uses my seitan beef and a WFPB sauce, for a quick and easy, protein-packed dinner!

Why I love this Vegan Mongolian Beef
- Dietary needs - this mongolian beef is dairy-free, plant-based, oil-free, and sugar-free
- High protein - this beef dish uses seitan, which is made from vital wheat gluten, and contains a large amount of protein!
- Delicious sauce - the sweet, salty, fresh gingery taste of this sauce is delicious!
- SO easy - this cooking method is one of my favorites because it is so quick and easy. The dish is ready before you know it!

Ingredient Notes & Substitutions
- Seitan Steak: I used my homemade Seitan Steak, which is SO quick and easy. You can also use your beef substitute of choice.
- Ginger & Garlic: the Mongolian-style sauce is very simple and gets much of its flavor from fresh ginger and garlic. Because of this, I highly recommend using fresh instead of dried.
- Water
- Coconut Sugar: coconut sugar adds sweetness and also thickness to the sauce. I haven't tried this, but you could sub maple or date syrup - you may just need to add a bit more cornstarch to compensate for the extra liquid.
- Soy Sauce, Tamari, or Liquid Aminos: any of these three will work to add some saltiness
- Cornstarch: cornstarch thickens the sauce and helps it to coat the beef
- Scallions: a bit of freshness really lightens up this dish - don't skip this garnish!
- White Rice: to serve

How to make Vegan Mongolian Beef
Step 1. If you haven't already, prepare the seitan steaks or your beef-substitute of choice. Slice the seitan steaks into thin, bite-sized pieces.

Step 2. In a large skillet over medium heat, cook the ginger and garlic for 30-60 seconds until fragrant.

Step 3. Add the soy sauce, coconut sugar, and water and bring to a simmer.

Step 4. Whisk in cornstarch and allow the sauce to thicken, about 2 minutes.

Step 5. Add the steaks and toss well. Cook 2-3 minutes more to warm the steaks.

Step 6. Serve over a bed of rice with a garnish of sliced scallions. Enjoy!

Vegan Mongolian Beef
Ingredients
- 1 Recipe Seitan Steak or beef substitute of choice
- 1" Piece Ginger grated
- 3 Cloves Garlic minced
- ⅓ Cup Water
- ⅓ Cup Coconut Sugar
- ¼ Cup Soy Sauce, Tamari, or Liquid Aminos
- 1 Tablespoon Cornstarch
- 1 Bunch Scallions sliced
- White Rice to serve
