This entire crisp is made with whole food plant-based ingredients. The peaches get covered with date or maple syrup for a sweet, juicy fruit layer.
Then the fruit is topped with a simple crumble layer made from oats, maple syrup, cinnamon and salt. It's the perfect amount of sweetness, crunch, and flavor!

What is a crisp?
There are three types of baked fruit desserts, topped with a pastry.
Crisps. Crumbles. Cobblers.
Cobblers are usually topped with biscuit dough, creating a more solid topping. Almost like a pie crust.
Crumbles and crisps are more similar. Crisps have an oat topping, while crumbles may not. But these two terms are pretty interchangeable.
So, a crisp is a delicious baked dish, with fruit on the bottom and a crispy, crumbly, and sweet oat topping.

Ingredient Notes & Substitutions
Filling Ingredients
- Peaches: This recipe is great for using up ripe peaches. But if your peaches aren't ripe you can still make this - you'll get tons of sweetness from the other ingredients. You can also use frozen peaches. Or replace the peaches with any fruit of your choice.
- Date Syrup or Maple Syrup: To add just a touch of sweetness to the already sweet peaches. The goal of the additional syrup is to create a sweet, juicy bottom layer.
- Lemon Juice: A bit of acid keeps the peaches tasting fresh. You can use lime juice as a sub.
- Vanilla Extract
- Cornstarch: To help the syrupy mixture thicken. You can also use arrowroot powder.
- Salt

Topping Ingredients
- Rolled Oats: rolled oats are the ideal crisp topping. You could also use quick oats (though I prefer the texture of rolled in this recipe). Avoid using steel cut oats - they won't work. Oats are naturally gluten-free, but if you have a severe gluten sensitivity, be sure to buy certified gluten-free oats to avoid the possible gluten contamination that can happen in processing.
- Maple Syrup: maple syrup will bind the crust together to make it crisp. If you want a completely fruit-sweetened dessert, use date syrup instead - the dish may need to bake longer with this option
- Oat Flour: I use oat flour because it is easy, relatively unprocessed, and cheap to make at home. But any flour will work.
- Cinnamon
- Salt

How to make Vegan Peach Crisp
Step 1. Preheat the oven or air fryer to 350°F.
Step 2. Add all the filling ingredients in a bowl and stir to combine.
Step 3. Pour the peach mixture into a small baking dish or dish for your air fryer.

Step 4. In a separate bowl, mix all the topping ingredients until a crumbly dough forms.
Step 5. Spread the topping evenly over the peach mixture.

Step 6. Bake for 20-25 minutes. Let cool slightly, serve with a scoop of ice cream and enjoy!

FAQ & Expert Tips
If your air frier comes with a baking dish with a solid bottom, you can easily follow the exact steps listed and bake in your air fryer instead.
If your air fryer has holes in the bottom where liquid can drip out, place the peaches on a sheet of aluminum foil before putting them in your air fryer.
This recipe makes 2-3 servings, so if you're looking to feed more people, triple the recipe and bake for 35-40 minutes
Yes! Frozen peaches are great. If you use frozen peaches thaw them completely at room temperature and discard any liquid that melts off.
Yep! This crisp would be great with any type of fruit. Replace the peaches in this recipe with about 2 cups of any fresh or frozen fruit. Or just go make my cherry crisp and blueberry crisp instead.
