As a kid, I loved peppermint patties. The soft silky texture and the sweet, refreshing peppermint taste. Peppermint patties are truly a joy to eat.
So, of course, I created a vegan version. These vegan peppermint patties are made with whole food plant-based ingredients. So they taste like that refreshing and sweet peppermint candy but they're actually healthy - minimal sugar, plant ingredients, and even some extra protein hidden in there.
They make a delicious holiday (or anytime) treat!

Why I love these Vegan Peppermint Patties
- Dietary needs - these bars are plant-based, oil-free, gluten-free, dairy-free, and refined sugar-free
- Healthier version of a classic - these bars are made with whole food plant-based ingredients so you can avoid the sugars, oils, and other processed ingredients in the store-bought version
- Freezer friendly - if you don't eat the entire batch in one sitting, these bars store very well. They'll last in the freezer for several months

Ingredient Notes & Substitutions
- Shredded Coconut: Coconut is what creates the creamy texture of the classic candy. Be sure to buy unsweetened coconut to avoid added sugars.
- Almond Powder: almond powder is similar to peanut powder. It's almonds that have been processed into a powder, leaving most of the protein and removing some of the fat. It is different than almond flour, which is ground almonds. You should be able to find almond powder at your local grocery store, or on Amazon. If you don't have almond powder, you can use almond flour.
- Maple Syrup: for a fruit-sweetened patty you can sub date syrup, but note that this will change the color of the bars
- Vanilla
- Salt: a pinch of salt helps enhance the sweet flavors, don't skip this!
- Peppermint Extract: peppermint extract is VERY strong so start with just a bit and increase until you achieve your desired level of peppermint
- Vegan Dark Chocolate: I use 100% unsweetened chocolate for the coating. If you prefer a sweeter chocolate, you can use any vegan dark chocolate like Enjoy Life or Pascha.
- Crushed Candy Canes: candy canes aren't exactly whole food plant-based, so definitely leave them out if you're looking for a WFPB treat. But if you'd like to include them, they add a nice pop of color and some extra peppermint flavor to these patties

How to make Vegan Peppermint Patties
Step 1. Add the coconut, almond powder/flour, syrup, vanilla, salt, and peppermint extract to a food processor and pulse until a loose dough forms.

Step 2. Scoop the dough into tablespoon-sized balls. Then flatten into discs. Freeze 10 minutes.

Step 3. Meanwhile, in a microwave safe bowl, melt the chocolate on 50% power, stirring every 30 seconds until completely melted and smooth.

Step 4. Using a fork, coat each peppermint disc in chocolate. Arrange on a baking tray topped with a wire rack or a piece or parchment to drip. Top with crushed candy canes if desired. Refrigerate 5-10 minutes to set. Enjoy!

FAQs & Expert Tips
The best sub for almond powder is almond flour.
Store these bars in the refrigerator or freezer. Avoid leaving the bars on the counter for too long to prevent melted chocolate.
These bars will last for several weeks in the fridge and several months in the freezer.
