    Rice Krispies Treats made healthy, these Vegan Rice Krispies Treats are sweet and sticky and made with only 5 plant-based ingredients and no marshmallows!

    I don't think I'm the only one who has wonderful childhood memories of eating Rice Krispies Treats. I can remember tearing into one of those bright blue packages and sinking my teeth into that sticky, marshmallow-filled, bar of sugar. Each bite was light and airy, yet sweet and rich.

    There's no need for Rice Krispies Treats nostalgia anymore though, because these Vegan Rice Krispies Treats are an incredibly delicious alternative. They have a light crunch and a salty-sweet flavor.

    It's actually amazing how yummy these bars are using plant-based ingredients and no marshmallows!

    Why I love these Vegan Rice Krispies Treats

    • Dietary needs - these bars are plant-based, oil-free, gluten-free, dairy-free, and refined sugar-free
    • Healthier version of a classic - these bars are made with whole food plant-based ingredients so you can avoid the sugars, oils, and other processed ingredients in the store-bought version
    • Freezer friendly - if you don't eat the entire batch in one sitting, these bars store very well. They'll last in the freezer for several months

    Ingredient Notes & Substitutions

    • Puffed Rice: avoid buying actual rice krispies cereal - there are preservatives and sugar that we can easily avoid. Choose puffed rice or another puffed grain like puffed amaranth or quinoa.
    • Nut Butter: I used my homemade cashew butter
    • Maple Syrup: for a fruit sweetened version use date syrup. Date syrup is great in this recipe and actually holds together better than maple syrup
    • Vanilla Extract
    • Salt

    How to make Vegan Rice Krispies Treats

    Step 1. In a large bowl, whisk the nut butter, maple syrup, vanilla, and salt.

    Step 2. Fold in the puffed rice and coat with the maple syrup.

    Step 3. Press the mixture into a square brownie pan. Freeze for an hour.

    Step 4. When ready to serve, remove from the freezer and slice into bars. Store leftovers in the fridge or freezer. Enjoy!

    • 3 Cups Puffed Rice or other puffed grain of choice if large, chop into small pieces
    • ⅓ Cup Nut Butter
    • ⅓ Cup Maple Syrup
    • 1 Teaspoon Vanilla Extract
    • ¾ Teaspoon Sea Salt
