    This hearty Vegan Steak Salad is packed with flavor, with savory seitan steak, fresh vegetables, creamy vegan feta, and crunchy sunflower seeds. It's a satisfying, protein-packed meal that's perfect for lunch or dinner.

    This vegan steak salad is one of those salad-as-a-meal salads. It's got tons of protein and of course vegetables, for a salad you'll actually feel satisfied after eating.

    This is of course a vegan version of traditional steak salad. For this recipe we're using my seitan steak, which is no boil and super quick to make.

    The remaining ingredients are classic steak salad ingredients - cucumbers, tomatoes, onions. Plus optional vegan feta and sunflower seeds.

    A hearty and delicious meal! It's great cold and makes for a delicious lunch!

    Ingredient Notes & Substitutions

    • Vegan Steak: I use my Seitan Steak (no boil!) which is packed with protein and has a savory, umami steak flavor. Feel free to use your favorite store-bought vegan steak, like beyond steaks. For gluten-free, I recommend using Abbot's beef or burgers.
    • Mixed Greens: feel free to use your favorite greens.
    • Red Onion
    • Tomatoes: grape or cherry
    • English Cucumber
    • Vegan Feta: optional, but adds a nice cheesy flavor
    • Sunflower Seeds: also optional. I love the crunch and flavor of sunflower seeds on this salad. Feel free to add almonds or pepitas.

    Dressing

    This is my oil-free vinaigrette dressing. Feel free to use something else like vegan ranch or vegan honey mustard.

    • Water: instead of oil as the base, we'll use water. We won't use it in the same proportion as you might in a regular vinaigrette - the water just helps get the right consistency and balance of flavors
    • Dijon Mustard: a vinaigrette staple ingredient. Dijon has the best flavor for a dressing like this - I don't recommend using yellow mustard
    • Maple Syrup: maple syrup adds some sweetness to the dressing. For a completely fruit-sweetened dressing, you can use date syrup instead
    • Lemon Juice: acid helps create a nice tangy flavor. You could sub lime juice or apple cider vinegar
    • Salt & Pepper

    Step-By-Step Instructions

    Step 1. Make the seitan steaks (or prepare vegan steaks of choice according to the package instructions). When cool enough to handle, slice the seitan steaks into strips.

    Step 2. In a small bowl, whisk together the dressing ingredients.

    Step 3. Assemble the salad. On a large platter plate the mixed greens, followed by the onion, tomatoes, and cucumber. Add the sliced steaks. Then sprinkle with the feta and sunflower seeds, if using. Drizzle with dressing.

    Pro Tip: serve with crusty bread or pita on the side for a complete meal.

    FAQ & Expert Tips

    Can I make this salad gluten‑free?

    This salad uses seitan, which isn't gluten-free. For a gluten-free alternative, opt for a GF/vegan protein like Abbot's - their burger or beef would be great on this salad.

    Should I serve the seitan warm or cold?

    I find the flavor and texture of warm seitan to be the best - if you're new to seitan, definitely serve it this way.
    That said, I loved this salad cold and that's the way I personally eat it.

    What dressing is best for steak salad?

    I used my oil-free vinaigrette. Any tangy, citrusy dressing is great. This salad would also be delicious with my vegan ranch, which has a nice lemony tang or something like vegan honey mustard.

    What is seitan?

    Seitan is a meat substitute made from vital wheat gluten. Various seitan recipes can be made from vital wheat gluten by varying the spices and cooking method.
    Vital wheat gluten basically a flour like substance that is primarily protein. This is what makes the steak so high in protein!

    Ingredients

    • 1 Recipe Seitan Steak or store-bought vegan steak, like beyond steaks
    • 6-8 Cups Mixed Greens
    • 1 Small Red Onion sliced
    • 1 Pint Grape or Cherry Tomatoes halved
    • 1 Medium English Cucumber sliced
    • ½ Cup Vegan Feta optional
    • ⅓ Cup Sunflower Seeds or pepitas or other nuts; optional

    Dressing

    • 3 Tablespoons Water
    • 3 Tablespoons Dijon Mustard
    • 3 Tablespoons Maple Syrup
    • 1 Tablespoon Lemon Juice
    • 1 Teaspoon Salt
    • ½ Teaspoon Pepper

    Instructions

    • Make the seitan steaks (or prepare vegan steaks of choice according to the package instructions). When cool enough to handle, slice the seitan steaks into strips.

    Notes

    Store leftovers in an airtight container for up to a week in the fridge. For best results, dress only the portion of salad you plan to eat and store the remaining dressing separately.
