Ingredient Notes & Substitutions
- Celery: you'll use a whole head of celery with this recipe. The sturdier outer stalks are better for this app, but if you have enough filling, feel free to use all the pieces.
- Vegan Cream Cheese: I use Kroger's simple truth non dairy cream cheese as I've found it's the best. Any non-dairy cream cheese will work!
- Vegan Cheddar: for more of the cheese & bacon vibe, I also included some vegan cheddar. Most vegan cheddars aren't super healthy, so feel free to skip if you're avoiding oil
- Coconut Bacon: the salty, sweet, deliciousness I love putting on everything! My coconut bacon takes just 10 minutes to make and is absolutely addicting.
- Fresh Parsley & Chives: fresh herbs are necessary here - they brighten up the cream cheese mixture
- Salt & Pepper
- Hot Sauce: like tabasco or Frank's red hot. The stuffing is not spicy, but feel free to add more hot sauce if you want some spice

Pro Tip: Dry the celery thoroughly after washing so the filling sticks well and doesn't slide out.
Step-By-Step Instructions
Step 1. Slice each stalk of celery into 3 pieces.

Step 2. In a medium bowl, whip the cream cheese until smooth.

Step 3. Add the cheddar, coconut bacon, parsley, chives, salt, pepper, and hot sauce. Whip again until smooth.

Step 4. If desired transfer the mixture to a piping bag or plastic bag to pipe.

Step 5. Pipe or spread the cream cheese mixture into each celery boat. Garnish with more fresh chives.

Instructions
