Dates are such a wonderful fruit. They are so incredibly versatile. You can use them to sweeten desserts like ice cream, chocolate pie, and candy bars. Or enjoy them as a snack, like in these stuffed dates.
For this recipe we're using medjool dates, which are larger and softer than other date varieties. So they're great to eat by themselves and taste like a caramel explosion in your mouth.
Dates are also packed with fiber and nutrients like potassium (more than a banana!) which makes them a delicious and nutritious choice for snacking.

Ingredient Notes & Substitutions
- Medjool Dates: make sure you buy medjool dates with their pits. Dates that have already been pitted will have have a hole in a weird spot. It's better if you can control where the opening is by cutting it yourself.
- Vegan Cream Cheese: not all vegan cream cheese is created equal. I recommend a brand like Miyokos because they use whole food ingredients and no processed oils or gums. Whichever brand you buy, be sure to use one without added sugar.
- Maple Syrup: the dates are naturally sweet, but a bit of maple syrup helps enhance the cream cheese flavor. If you want, you can use date syrup instead or omit the syrup entirely.
- Fresh Thyme Leaves: thyme has a beautiful earthy & fresh flavor that pairs perfectly with cream cheese. Grab a few extra sprigs to garnish your dates.
- Salt: if your cream cheese is already salted you can omit the salt
- Pistachios: salted pistachios add a nice crunch and a bit of salty flavor to balance the sweet.

How to make Vegan Stuffed Dates
Step 1. Use a pairing knife to carefully cut a slit lengthwise through each date. Remove the pits, keeping each date intact. Set aside.

Step 2. In a small bowl mix the cream cheese, maple syrup, thyme, and salt.

Step 3. Use a piping bag or zip top bag to pipe the cream cheese mixture into each date. Top with the pistachios and a garnish of thyme.

FAQ & Expert Tips
It's easier to control exactly where the opening in each date is when you cut them yourself.
Cut the corner of off a zip-top bag and use as a make shift piping bag.
Store the stuffed dates in the fridge. They will last up to a week.
