    • Leftover Mushroom Gravy: I used my mushroom gravy any gravy or sauce will work. Or you can use mayo or your favorite sandwich spread.
    • Leftover Seitan Turkey: I used my seitan turkey. Feel free to use whatever protein you served at Thanksgiving.
    • Leftover Mashed Potatoes: I used my classic vegan mashed potatoes.
    • Leftover Stuffing: I used my WFPB gf stuffing - it's my go-to recipe every year!
    • Leftover Cranberry Sauce: my sugar free cranberry sauce is perfect here, or store bought.
    • Chives: I added some chives at the end for a bit of freshness.

    Feel free to go crazy with the ingredients! Anything you have will be delightful on a sandwich.

    Toast your bread if desired.

    Then, onto one piece of bread, spread a thin layer of gravy.

    Add your seitan turkey or other protein.

    Then mashed potatoes and stuffing.

    Top with cranberry sauce and fresh chives.

    Add the remaining slice of bread.

    I like starting with gravy as the spread for my sandwich, instead of something like mayo.

    Then go in with your most stable ingredients. For me, this was layers of seitan turkey.

    Then looser or saucier elements, like cranberry sauce or gravy if you didn't use it as a spread.
