    This Gingerbread Latte Syrup is bursting with warm, spiced gingerbread flavor. Perfect to add holiday flavors to lattes, mocktails, and more!

    I've added quite a few syrups to my repertoire this year, but this syrup by far takes first place. The flavor is so incredible - you will marvel at how so much flavor can be packed into a syrup with just a few ingredients.

    The key is fresh ingredients, specifically fresh ginger. There is just no comparison to dried in terms of flavor. Definitely worth picking up a piece of ginger at the store (it's often way cheaper than buying a jar of the spice!)

    This gingerbread latte syrup is absolutely perfect for gingerbread lattes and is the star of the show in my gingerbread mocktail. It is all the holiday goodness in a simple syrup!

    Ingredient Notes & Substitutions

    • Brown Sugar or Coconut Sugar:  to make sure this syrup is vegan, be sure to use a vegan-friendly brown sugar. I like to make my own brown sugar (it takes 5 minutes and is WAY cheaper) to ensure I have vegan sugar. But any brown sugar will work. You can also use coconut sugar for a refined sugar free version
    • Water
    • Molasses: molasses is used in gingerbread, and adds a deeper, richer flavor to the brown sugar (which itself is made with molasses!)
    • Ginger, Cinnamon, Cloves: I highly recommend fresh/whole versions of these. It makes the syrup less gritty, and creates a much bolder flavor. I give a recommendation for the amounts of ground below

    Step-By-Step Instructions

    Step 1. In a small saucepan, combine the sugar, water, molasses, ginger, cinnamon, and cloves. Bring to a boil and let boil for 1 minute.

    Step 2. Remove from the heat and stir in the vanilla. Let cool completely in the pan (this is necessary to infuse all the flavor!).

    Serving Suggestions

    Great in iced coffee (a gingerbread latte, of course), cold brew, matcha, tea, fall mocktails, or brushed over baked goods for extra shine.

    FAQ & Expert Tips

    Can I make it thicker or thinner?

    This syrup has the texture of a classic simple syrup. But feel free to simmer longer for a thicker syrup or add a splash of water to thin it.

    How long does homemade syrup last?

    Stored in an airtight container in the fridge, it lasts up to a month.

    Pro Tip: Strain the syrup through a fine mesh sieve while warm to remove any spice sediment and keep the texture silky.

    Ingredients

    • 1 Cup Brown Sugar or Coconut Sugar
    • 1 Cup Water
    • 2 Tablespoons Molasses
    • 1 1- Inch Piece Ginger peeled; or ¼ teaspoon ground ginger
    • 2 Cinnamon Sticks or ⅛ teaspoon ground cinnamon
    • 2 Whole Cloves or pinch ground cloves
    • ½ Teaspoon Vanilla
