A friend of mine recently said to me that she is going to miss charcuterie after going dairy-free and gluten-free. I immediately pulled up a picture of this board to show her that you can make totally epic, delicious charcuterie without the meat or cheese.
That's the beauty of charcuterie. You can pick the ingredients!
The key to any good charcuterie board is to pick a variety of foods from several different categories. To make a vegan board, you just need a few vegan friendly options - like vegan cheeses or dips, and heartier options like vegan meats or nuts.
And I've done the brainstorming for you! Below I've listed your essential charcuterie categories and tons of options for each category.

FAQ & Expert Tips
The most beautiful boards look effortless because they were actually effortless.
Don't think too much about where a specific item should go - just place it on the board in a random spot, starting generally towards the center of the board and moving outwards.
Look for ways to create balance. Place larger items spaced apart from other larger items. Avoid putting similarly shaped items next to each other. Find ways to angle cut foods in opposing directions.
To save time right before guests arrive, you can assemble the cold/refrigerated parts of your board, like dips, fruits, and vegetables. Leave open spaces for items like breads and crackers that shouldn't be refrigerated. Place the entire board in the fridge and add the crackers right before guests arrive.
If you want to make a board ahead of time and bring it with you, place your board on top of a very large piece of plastic wrap or foil before you start to assemble. (Think 2-3x the size of your board.)
After you assemble the board, fold the edges of the foil/plastic wrap up and onto the top of the board. This keeps all the ingredients on the board and prevents items from shifting.
Always start your charcuterie board with the largest items. Anything in a bowl, like a dip or spread should go first, to make sure you have room for the bowl. Then the larger cheeses and larger pieces of bread.
When preparing vegetables for charcuterie, keep in mind that guests will be using their fingers to eat. So make each vegetable bite sized. Carrots, peppers, and celery are great sliced into sticks. Cucumbers can be cut into rounds. And other vegetables like broccoli and cauliflower should be cut small enough to be bite-sized.
Opt for lightly salted nuts for the most flavor - unsalted nuts can be too bland. Almonds, cashews, and pecans are all great options. Trail mix or a can of mixed nuts is usually my go-to.
Classic water crackers are very traditional, and are neutral enough in flavor to go with any other food on the board. I also like including something cracker-adjacent like pita chips.
Bite sized and non-juicy fruits are ideal. Think grapes and blueberries, even raspberries. Or dried fruits like apricots and cranberries.

Instructions
- Select a few ingredients from each category. Grab a large board or tray. Assemble the board. Arrange the items in a random manner - don't worry about making things even or symmetrical. The most natural looking boards use the least amount of thought 🙂Start with any items in bowls, like dips.Then add the largest items, like a vegan cheese block, larger bread or crackers, and large vegetables.Next add smaller items, like fruit pieces, smaller vegetables, and small crackers.Finally use the smallest nuts and other snacks to fill in any leftover gaps.
