    Gingerbread Almonds

    Covered in sticky molasses and sprinkled with gingerbread spices, these Gingerbread Almonds are the perfect (healthy) holiday snack.

    Am I the only one who loves to snack on nuts? Seriously, nuts and nut butter are some of my favorite foods. I love how nutrient dense nuts are. They are filled with healthy fats and essential vitamins.

    I sometimes get bored of just plain nuts though. So I like to invent new flavors. Some of my favorites are my Roasted Cashews (3 Ways!) and my Cinnamon Candied Pecans. These Gingerbread Almonds may just become my new favorite.

    Gingerbread is a classic Christmas flavor -- sweet and sticky molasses with potent ginger, YUM. Of course, I wanted to keep all the gingerbread goodness and leave out all the bad stuff that gingerbread recipes traditionally contain. So when developing this recipe I used the basic gingerbread flavors and said "see ya" to all the rest.

    I made these Gingerbread Almonds with a similar recipe to the Cinnamon Candied Pecan recipe I mentioned above. I love the pecan recipe so I knew these almonds would turn out delicious too!

    Ingredient Notes

    • Almonds: use raw, unsalted almonds
    • Date Syrup: you can sub maple syrup
    • Molasses
    • Gingerbread Spice: You may be able to buy gingerbread spice in the store, but it's simple to make. You likely have all the spices you need in your spice drawer. Just mix cinnamon, ginger, allspice, cloves and nutmeg

    How to make Gingerbread Almonds

    Step 1. Preheat the oven to 350°F. Line a baking sheet with parchment paper. Make the gingerbread spice if you don't already have some.

    Step 2. Mix the almonds, date syrup, molasses, and gingerbread spice in a medium bowl. Spread on the lined baking sheet and bake for 15 minutes.

    Step 3. Let cool completely. Enjoy!

    Gingerbread Spice

    • ⅜ Teaspoon Ground Cinnamon
    • ¼ Teaspoon Ground Ginger
    • ⅛ Teaspoon Ground Allspice
    • ⅛ Teaspoon Ground Cloves
    • ⅛ Teaspoon Nutmeg

    • 1 Cup Raw Almonds
    • 1 Tablespoon Date Syrup
    • 1 Teaspoon Molasses
    • 1 Teaspoon Gingerbread Spice

    Instructions
