    Maple roasted cashews are perfect for parties, snacking, and all kinds of cravings. Sweet and salty flavors make a great combination.

    Cashews are second on my list of favorite nuts (yes, I have a list). Pecans are number one. But you've already enjoyed my roasted pecan recipe so it's time for a change of pace and new delicious roasted nut recipes to try.

    Why I love these Maple Glazed Cashews

    • Dietary needs - these nuts are oil-free, dairy-free, plant-based, gluten-free, and refined sugar-free
    • Perfect snack - make a batch of these maple roasted cashews to have a delicious snack to munch on whenever you want a crunchy, sweet treat
    • Nutrient-dense - nuts pack in so many vitamins and minerals, especially Omega-3s and other healthy fats

    Ingredient Notes

    • Raw Cashews: use raw cashews to avoid any added ingredients or flavors. I like to buy my nuts in bulk because they can be cheaper that way!
    • Maple Syrup: I've used both maple and date syrup in this recipe and both work well. If you use date syrup, make sure the syrup hardens almost completely in the oven or else you'll end up with sticky pecans
    • Salt
    • Pinch Cayenne: you can add cayenne to make these spicy roasted cashews. Just a pinch will add a hint of spice, while ⅛ teaspoon will make these cashews pretty spicy.

    How to make Maple Roasted Cashews

    Step 1. Preheat the oven to 350°F. Line a baking sheet with parchment paper.

    Step 2. In a medium bowl mix the cashews, maple syrup, salt, and cayenne (if using).

    Step 3. Place the cashew mixture on the lined baking sheet and bake for 15-20 minutes.

    Step 4. Remove from the oven and let cool completely. Break into chunks, serve, and enjoy!
