Make this twist on a Mediterranean dinner with Vegan Mediterranean Nachos. These nachos have a base of pita and loaded with Mediterranean staples like hummus and tzatziki.

I'm a huge fan of Mediterranean food. Not only is it delicious, lots of it is really healthy.
Doctors don't advocate for a Mediterranean diet for no reason - the cuisine is rich with vegetables and beans.
So, I took all the best parts of Mediterranean cuisine and turned them into nachos. I mean, who doesn't love nachos?

Why I love these Mediterranean Nachos
- Dietary needs - this dish is vegan, dairy-free, oil-free, sugar free and can be made gluten-free
- Twist on a classic - these nachos have all the classic Mediterranean flavors, but they're nachos!

Ingredient Notes & Substitutions
- Pita Bread: pita is naturally vegan, so it's a great choice for this recipe. If you're gluten-free, look for a gluten-free pita bread - sometimes they're in the frozen section. You cold also use pita chips.
- Chickpeas: canned chickpeas are perfect for this recipe.
- Spices: garlic powder, salt, paprika or smoked paprika
- Nacho Toppings: I used kalamata olives, roasted red pepper, banana peppers, cucumbers - feel free to add your favorites
- Hummus & Tzatziki: these serve as the 'cheese' for the nachos. Head over to my oil-free hummus recipe and my tzatziki recipe to make your own.

How to make Plant-Based Nachos
Step 1. Preheat the oven to 350°F.
Step 2. In a medium bowl toss the chickpeas with the garlic powder, paprika, and salt.
Step 3. Spread on a baking sheet and bake for 20-25 minutes, until crispy on the outside but soft on the inside.

Step 4. Slice the pita bread into triangles. Place on a separate baking sheet and toast in the oven with the chickpeas for 8-10 minutes - watch for burning.
Step 5. To assemble, place a bed of pitas down on a baking sheet or tray. Dollop the hummus onto the pitas, add the chickpeas, top with the olives, red peppers, banana peppers, and cucumbers. Drizzle with tzatziki. Enjoy!

Plant-Based Mediterranean Nachos
Ingredients
- 4-5 Small Pita Breads gluten-free or regular OR 3 Cups Vegan Pita Chips
- 1 15 Ounce Can Chickpeas drained & rinsed
- 1 Teaspoon Garlic Powder
- 1 Teaspoon Salt
- ½ Teaspoon Paprika or Smoked Paprika
- ⅓ Cup Kalamata Olives
- ¼ Cup Roasted Red Peppers
- ¼ Cup Banana Peppers
- ¼ Cup Sliced Cucumbers
- ½ Cup Hummus
- Tzatziki to serve
