Alright, this recipe might be competing for my all-time favorite recipe. Don't get me wrong, my plant-based bourbon pecan pie and my no-churn date-sweetened vegan vanilla ice cream are both incredibly delicious recipes. But this nutella.
THIS NUTELLA.
It is SO good.
And it's so easy to make. Like 10 minutes and you're done. I can't believe I haven't tried making nutella before. This spread is so good. No wonder people love nutella so much.

As per usual, I've made some swaps to the original recipe to make a healthy, whole food version of nutella. One that is delicious and nutrient dense.

Why I love this homemade Vegan Nutella
Okay were do I start? This nutella is rich and thick and creamy. It's the perfect balance of sweet and salty, with tons of flavor from the nutty hazelnuts and chocolate. Like, it's a dream.
- Dietary needs - this nutella is vegan, gluten-free, dairy-free, oil-free, and refined sugar free
- Vegan version of a classic - this is the healthier version of store-bought nutella. There's no added oils or milk powder like you'd find in the original nutella
- Nutty chocolaty goodness - seriously, you will be addicted to this nutella. Hazelnuts themselves have so much flavor. And when paired with chocolate and a bit of sweetness, they are just divine

Ingredient Notes & Substitutions
- Dry Roasted Hazelnuts: I used dry roasted hazelnuts because they don't have any added oils, and are easier to find than raw hazelnuts. You can definitely use raw hazelnuts. If you want, you can toast them in the oven for a few minutes before blending.
- Unsweetened Chocolate: unsweetened chocolate is ideal for this recipe, so you can adjust the sweetness to your tastes. Using unsweetened chocolate also keeps this recipe refined sugar free. Avoid using cocoa powder in this recipe - see my note below.
- Maple Syrup: just a hint of maple syrup transforms this nutella. For a fruit sweetened version, use date syrup instead.
- Vanilla Extract: a hint of vanilla enhances the overall flavor
- Salt

How to make Vegan Nutella
Step 1. Add the hazelnuts to a food processor and blend until smooth. This may take several minutes and you may need to scrape down the sides of the bowl. When smooth, the nut butter should sound 'sloshy' as it splashes on the sides of the food processor.

Step 2. While the nut butter is processing, melt the chocolate.

Step 3. Add the melted chocolate, maple syrup, vanilla, and salt to the nut butter. Pulse a few times to mix - avoid overmixing. Serve and enjoy!

Ways to eat Nutella
Oh the possibilities...
- on toast or an English muffin
- as a drizzle on vegan ice cream
- spread on a brownie
- inside a date as a quick snack
- as a dip for apple slices
- on pancakes or French toast
- stirred into oatmeal or yogurt
- by itself on a spoon

FAQ & Expert Tips
Since this nutella doesn't have any oils or gums to keep a certain consistency, too many added ingredients will ruin the texture. Use only as much maple syrup as you need to achieve your preferred sweetness level.
I recommend using only maple syrup or date syrup. A dry sweetener might cause the nutella to clump up.
If you really want to use a dry sweetener, use something like stevia that has a high ratio of sweetness to volume, so you can add as little dry ingredients as possible
Cocoa powder is very dry, and when added to hazelnut butter it clumps up to create a terrible texture. Use only melted chocolate
