Why You'll Love This Vegan Creamy Chicken Noodle Soup
- Dietary needs - this recipe is plant-based, oil-free, egg-free, dairy-free, and sugar-free
- Simple ingredients - there are only a few basic ingredients in this soup. Nothing weird or hard to find!
- Twist on a classic - everything you love about chicken noodle soup, but made vegan
- High protein - by using a chicken substitute or my homemade seitan chicken, we get a bunch of vegan protein. So this soup has a similar macronutrient profile to classic chicken noodle soup

Ingredient Notes & Substitutions
- Vegan Chicken: I used Daring Chicken. You can also use a plant-based chicken recipe like my seitan chicken, which I use in my classic chicken noodle soup. You can also use chickpeas or any bean!
- Celery, Carrots, & Onion: the basic vegetables I use in basically every soup - these veggies are classics in chicken noodle soup
- Garlic
- All Purpose Flour: flour coats the vegetables and helps us build that creamy texture. I used all purpose here but you can use a gluten-free all purpose flour or oat flour
- Bay Leaf
- Salt & Pepper
- Thyme Leaves & Rubbed Sage: for a more herby, earthy flavor
- Russet Potato: a potato helps add creaminess to the soup without completely relying on cream, because it releases starch. It's also a nice soft bite!
- Vegetable Stock: veggie stock or broth both work
- Rotini: any short pasta will work. Feel free to use a gluten-free or bean based pasta.
- Vegan Cream Cheese: many classic creamy soup recipes use heavy cream, but I think the best swap is vegan cream cheese, so that's what I recommend here. The best sub is unsweetened extra creamy oat milk, or any unsweetened non-dairy milk.
- Chopped Fresh Parsley: for a bit of freshness, and a nice garnish

Step-By-Step Instructions
Step 1. Prepare you chicken of choice.

Step 2. Sauté the onion, celery, carrots, and garlic. Cook for 4-5 minutes, until the vegetables are softened.

Step 3. Add the flour, bay leaf, thyme, sage, salt, and pepper. Stir to coat the vegetables.

Step 4. Add the potato and vegetable stock to the pot and bring to a boil.

Step 5. Add the pasta to the pot, and boil in the broth according to the time indicated on the package directions.

Step 6. When there is about 2 minutes left for the pasta to cook, add the cream cheese, vegan chicken, and parsley. Stir to cook another 2-4 minutes.

Step 7. Before serving, remove the bay leaf. Serve with a garnish of fresh parsley.

Elizabeth's Kitchen Notes
- Chicken: in my classic chicken noodle soup recipe I used my seitan chicken, which I love because it has so much protein and is totally homemade. For this recipe I decided to use a store-bought chicken, Daring. I also love Abbot's chicken. You can also use chickpeas or even tempeh.
- Cream cheese: many classic creamy soup recipes use heavy cream, but I think the best swap is vegan cream cheese. I typically use Kroger's simple truth organic non-dairy cream cheese. I also love Violife
