This is my spin on the viral green goddess salad recipe! I love the idea of a chopped veggie salad that works as a dip or even a filling for sandwiches.
I knew I wanted to add a bit more protein and fiber, so that's where the chickpeas come in.
Then, to keep this recipe oil-free, I whipped up a green goddess inspired version of the sauce from my avocado pasta recipe - it's made creamy with avocados instead of olive oil!
The result is a deliciously addictive salad. It tastes amazing with tortilla chips (you can totally make your own oil-free chips) and is a vibrant filling option for a sandwich.

- Basil & Spinach: basil gives this sauce pesto vibes. I also use a handful of spinach for more nutrients!

- Nutritional Yeast: nutritional yeast is a yellow yeast that has a cheesy flavor. It's the perfect substitute for cheese in many vegan recipes, like this pesto.

- Green Cabbage: the classic salad uses green cabbage, but red cabbage works just the same
- Cucumbers: I used baby cucumbers, but feel free to use regular cucumbers or English
- Scallions

Step 1. Add all of the dressing ingredients to a blender. Blend until smooth.

Step 2. Add the cabbage, cucumber, scallions, chickpeas, and dressing to a large bowl and toss to combine.
