Why I love this Vegan Mushroom Toast
- Savory breakfast without meat - it can seem hard to find savory breakfast options since many 'traditional' savory breakfasts include meat, dairy, or eggs. Mushrooms are the perfect vegan solution - they've got that umami flavor which is great if you're feeling like eating something savory
- Easily made gluten-free - if you are not allergic to gluten, I recommend using sourdough bread for this toast - it's full of probiotics and can be a good option for those who are a little sensitive to gluten. If you're fully gluten-free, feel free to use your favorite gluten-free bread (or even a gluten-free sourdough!)
- Nutrient-dense - I talk a lot about eating three servings of beans each day. This mushroom toast is the perfect vessel to sneak in some beans in the morning
- Really easy - all you have to do is cook the mushrooms, then assemble your toast
- Especially if you prep ahead - cook up a batch of mushrooms and make some hummus on the weekend for a super quick breakfast each day
- Also a great lunch or snack - I've been talking about eating this toast for breakfast, but it would also make a delicious lunch or filling snack

Ingredient Notes & Substitutions
- Soy Sauce: if you're gluten-sensitive use tamari or liquid aminos instead
- Yellow Onion: you could also use a red or white onion
- Garlic: fresh garlic is ideal. You can use garlic powder as a sub if you don't have fresh
- Mushrooms: I used a mixture of shiitakes and white button mushrooms, but this recipe works well with any type of mushroom. If your mushrooms are large, slice them in half or quarters so you can easily fit them on your toast
- Sourdough Bread: I used a sourdough loaf I got at my local farmer's market. Any bread will work well though - this recipe would taste especially delicious with a dark rye bread
- Oil-Free Hummus: I used my homemade oil-free hummus which is my go-to hummus recipe (it's so easy). If you'd like to use store bought hummus, look for a hummus without added oil. And avoid canola oil and soybean oil at all cost!
- Microgreens: microgreens add some freshness to the toast - just a small handful is perfect. I used broccoli sprouts, but choose your favorite microgreen

How to make Vegan Mushroom Toast
Step 1. In a medium non-stick pan, sauté the onion until soft, using the soy sauce as the cooking liquid.
Step 2. Add the garlic and stir 30 seconds.

Step 3. Add the mushrooms and cook 5-7 minutes, until soft. You likely won't need more cooking liquid since by this point the onions will have released their natural liquid and the mushrooms will begin to release their liquids too.

Step 4. Meanwhile, toast the bread.

Step 5. Spread a layer of hummus on the toast, add the mushroom mixture, and top with microgreens. Enjoy immediately!

FAQ & Expert Tips
Make this recipe gluten-free by using a gluten-free sourdough or other gluten-free bread of choice.
To make this dish ahead of time, sauté the onion, garlic and mushrooms as instructed in the recipe. Store in the refrigerator.
Then, reheat the mushrooms in the microwave each day while you toast the bread. Breakfast in minutes!
Microgreens are the seedlings of common vegetables and herbs. You may see varieties like broccoli sprouts, clover sprouts, sunflower sprouts, etc.
You can find microgreens near the refrigerated herbs in your grocery store. Or at your local farmers market.
Most microgreens have a similar taste, like lettuce greens - so if you buy broccoli sprouts, they will just taste like greens not broccoli. There are small nuances in taste that distinguish the varieties, but not huge differences. My personal favorite is broccoli sprouts.
