I am a huge Dr. Pepper fan! It's the best soda and there's no argument. I don't drink traditional sodas these days, often opting for the 'better for you' swaps or my own creations. So I decided to try my hand at a homemade version.
I tried a recipe online and, quite honestly, wasn't thrilled. I made some tweaks and finally came up with a combo that gives store-bought Dr. Pepper a run for its money.
This recipe is a syrup, to which you can add sparkling water to create your soda. It's a mix of fruits, citrus zest, spices, and extracts. And the final combination is incredibly delicious!

Why does this recipe work?
Dr. Pepper is famous for its complex flavor profile. While the exact commercial recipe is proprietary, most people describe it as a blend of: cherry, cola, vanilla, citrus, warm spices.
Part of what makes Dr. Pepper unique is that no single flavor dominates. Instead, it tastes like layers of fruit, spice, and sweetness working together.
This homemade version recreates those same flavor notes using whole-food ingredients and pantry spices.

Ingredient Notes & Substitutions
Syrup Ingredients
I *know* there are a lot of ingredients here, but Dr. Pepper is known for having many ingredients. You need each spice layered together to create the final flavor profile.
- Brown Sugar: for that classic cola caramelly-sweet flavor. If you want a refined sugar free option, agave is the best substitute. It creates a slightly lighter drink, but the overall flavor is the same
- Water
- Spices: cinnamon, star anise, cloves, nutmeg. For the best result use whole spices. If you use the ground version of any of these, you'll end up with small spice particles in the final drink - it doesn't affect the flavor as much as it does the texture
- Peppercorns: it is Dr. Pepper after all! It seems like a lot of peppercorns, but whole peppercorns do not give off as much peppery heat as ground.
- Ginger: ginger adds a nice kick and helps support that peppery flavor.
- Citrus zest: orange, lemon, lime. Grab a microplane and zest away! The combo of all three citrus fruits balances sweetness and brightness.
- Cherries: cherries give that uber sweet, almost almond like flavor. I used frozen cherries because they are available year round, but fresh pitted cherries will work too.
- Prunes: Dr. Pepper is rumored to have prune juice, and I really liked the flavor the prunes added. More sweetness like the cherries but not as almondy
- Pinch Salt: to enhance all the flavors
- Vanilla & Almond Extracts: to build the cola flavor
- Apple Cider Vinegar: for a little bit of a bite.

- Dr. Pepper Syrup
- Sparkling Water

Step-By-Step Instructions
Step 1. In a small saucepan heat the sugar, water, cinnamon, star anise, cloves, nutmeg, peppercorns, ginger, orange zest, lemon zest, lime zest, cherries, prunes, and salt. Bring to a boil, and cook, stirring, until the sugar is dissolved.

Step 2. Remove from the heat and stir in the the extracts. Let cool for 15 minutes.

Step 3. Strain the syrup using a fine mesh strainer.

Step 4. Serve 1-2 ounces of the syrup over ice topped with sparkling water.

Elizabeth's Kitchen Notes
- Steeping Time: the longer you let the syrup steep, the more intense the flavor will be. I've found 15-20 minutes to be the sweet spot. If you let the syrup sit too long some of the spicier ingredients like ginger will completely take over.
- Stick to the ingredient list: there are a lot of ingredients, yes, but they create layers of flavor that make the end result.
