What is jicama?
Jicama is a root vegetable. It is usually a circular shape with a brown skin.
The inside flesh is white. And it has a texture somewhat like an apple. Though not as sweet.
You can buy jicama in most grocery stores in its whole form in the produce section. It's also typically available in the prepared vegetables section, already peeled and cut into sticks.

Ingredient Notes & Substitutions
- Jicama: feel free to buy a whole jicama and peel it or buy the pre-cut jicama in the packaged produce section
- Carrots: carrots taste best when you buy them whole and grate them yourself, so I highly recommend this. But buying pre-grated carrots is a great time-saver if you're in a pinch
- Baby Cucumbers: baby cucumbers tend to have less seeds and thinner peels, so I recommend them in a slaw like this to reduce prep time. But feel free to partially peel and seed a regular cucumber instead.
- Pineapple: fresh pineapple is ideal, but you could canned in a pinch
- Strawberries: if you want to use a different fruit, blueberries would also be tasty in this slaw
- Jalapeño: leave the seeds in for extra heat or discard them to cut down on spice
- Cilantro: fresh cilantro is best, but there are some good freeze dried options that you could sub to cut down on prep time
- Lime Juice: fresh lime juice will have the best flavor, but a store bought juice would be fine too
- Maple Syrup: for a completely fruit-sweetened slaw use date syrup instead
- Salt & Pepper

If you have leftovers, place them in an air tight container and store in the fridge. The slaw will last up to a week in the fridge
The ingredients in this slaw are pretty hardy, but if you want to optimize freshness you can sprinkle some lemon juice on the slaw - the acid helps keep the ingredients from going bad.

Ingredients

- 3 Baby Cucumbers, sliced and quartered
- 2 Cups about ½ large Pineapple, diced
