    This Vegan Gluten-Free Apple Cobbler takes tart granny smith apples and transforms them into a sweet filling with a crisp cobbler topping for a delicious fall dessert or apple pie alternative!

    What is a cobbler?

    There are three types of baked fruit desserts, topped with a pastry.

    Crisps. Crumbles. Cobblers.

    Crumbles and crisps are very similar. Crisps have an oat topping, while crumbles may not. But these two terms are pretty interchangeable.

    Cobblers are usually topped with biscuit dough, creating a more solid topping. Almost like a pie crust.

    This vegan gluten-free apple cobbler uses a plant-based biscuit dough for a deliciously crispy topping.

    Why I love this Vegan Gluten-Free Apple Cobbler

    • Dietary needs - this recipe is vegan and gluten free. And with apples and maple syrup used to sweeten, it's also refined sugar free. You won't find any vegan butter here - this recipe is also oil-free.
    • Easy to make - you don't really need any special equipment and you only need a couple of bowls to prep this crisp
    • Tasty fall dessert - serve this cobbler instead of apple pie for your Thanksgiving dinner. Or whip out this recipe for a decadent, yet healthy dessert anytime

    Ingredient Notes & Substitutions

    Apple Filling

    • Granny Smith Apples: granny smiths are the standard apple used for baking. They are tarter than other apples, but also firmer and tend to keep their shape. The other filling ingredients will help balance out the tartness of these apples.
    • Maple Syrup: Maple syrup helps bring back some sweetness that the apples lack, but if you'd like to make this recipe completely fruit-sweetened, you can omit the maple syrup or use date syrup instead.
    • Arrowroot Powder/Cornstarch: arrowroot helps to thicken up the fruit layer. Arrowroot powder and cornstarch are interchangeable, so use whatever you have
    • Lemon Juice: lemon juice helps the fruit stay fresh. It also adds a bite of acid to the dish to create a layer of flavor. Don't skip it, but you could sub lime juice.
    • Vanilla Extract
    • Cinnamon
    • Salt

    Biscuit Topping

    • Flour: You can use oat flour, almond flour, or cassava flour. I used 2 cups of almond flour and ½ cup of homemade oat flour
    • Maple Syrup or Date Syrup: most biscuit doughs use sugar, so I replaced the sugar with maple syrup. For a completely fruit-sweetened cobbler, you can use date syrup
    • Cashew Butter or Almond Butter: the nut butter is a plant-based substitute for butter, which is traditionally used in biscuit dough. Use a nut butter that's on the thicker side to help mimic the texture of butter
    • Non-Dairy Milk: I used soy milk, but any non-dairy milk will work
    • Flax Egg: a combination of ground flaxseed and water, a flax egg helps bind the dough together like a regular egg would
    • Baking Powder
    • Cinnamon
    • Salt

    How to make Vegan Gluten-Free Apple Cobbler

    Step 1. Preheat the oven to 400°F.

    Step 2. In a large bowl toss the apples, maple syrup, arrowroot, lemon juice, vanilla, cinnamon, and salt. Place in a casserole dish or deep dish pie pan.

    Step 3. In a separate bowl mix the flour, maple syrup, nut butter, milk, flax egg, baking powder, cinnamon, and salt.

    Step 4. Spread the crust over the apple mixture - you can place it all in one layer or scoop into 2-tablespoon sized balls and flatten. Bake 30-35 minutes until the biscuit top is crisp. Let cool slightly before serving. Can be served warm or cold. Serve with a few scoops of vegan ice cream.

    FAQ & Expert Tips

    Add some fiber.

    If you don't mind the texture, leave the peels on the apples for extra fiber and nutrients.

    Can I use another type of fruit?

    Yep! This cobbler would be great with any type of fruit. Replace the apples in this recipe with about 6-8 cups of any fresh or frozen fruit.

    Make it nut-free

    To make this cobbler nut-free use more oat flour instead of almond flour in the biscuit dough. And make sure to use tahini or sunflower seed butter instead of cashew butter.

    How long will this cobbler last?

    This cobbler is are made from whole food ingredients with no preservatives, so it won't last forever!
    It will last 5-7 days if covered properly.

    Storage

    Store this cobbler covered in the fridge for up to a week.
    I do not recommend freezing this cobbler.
