I have been obsessing over all things ginger recently. I think it started with my lemon ginger simple syrup recipe. And then I made ginger shots, which I take on the regular! I love the bright, tangy flavor and all the health benefits.
So today I have a ginger spin on a mojito. In mocktail form of course.
Mojitos are traditionally made with mint, lime, and rum. And this ginger version has that extra burst of tangy ginger! Delish.

Ingredient Notes & Substitutions
- Mint Leaves
- White Grape Juice: I love using white grape juice in mocktails because it adds a simple, sweet base, and helps give some volume as well as depth of flavor
- Lime Juice: fresh lime juice is best
- Lemon Ginger Simple Syrup: this is my homemade lemon ginger simple syrup!
- Molasses: The America's Test Kitchen version of alcohol-free rum uses molasses as one of the primary flavors to imitate rum. And instead of going through an entire process to make a fake rum, we can just add some molasses to help create the rum flavor.
- Ice: cubes for shaking the cocktail, crushed for serving
- Sparkling Water: you can also use ginger flavored seltzer or even ginger beer
- Lime Slices: for garnish

Step-By-Step Instructions
Step 1. In a cocktail shaker or jar muddle the mint leaves.

Step 2. Add a few cubes of ice, the grape juice, lime juice, lemon ginger syrup, and molasses. Shake until the shaker has frosted over.

Step 3. Add more ice to your glass. Pour the juice mixture over the ice. If desired, add a few mint leaves and lime slices into the glass. Top with sparkling water.

How to a mojito mocktail taste more like rum
Since traditional mojitos are made with white rum, this mocktail uses a few simple ingredients to recreate that same depth and complexity-without any alcohol.
White grape juice acts as the base, adding a light, slightly floral sweetness that mimics the body of white rum. A small amount of molasses brings in those deeper, almost caramel-like notes that you'd typically get from aged spirits.
Combined with fresh lime juice and mint, it creates a really balanced, cocktail-style flavor.
If you want to take it a step further, here are a few easy ways to enhance that "rum-like" taste using common ingredients:
- Add a tiny splash of vanilla extract (not too much or it's all you'll taste - less than ⅛ teaspoon)
- Stir in a drop or two of apple cider vinegar for subtle bite - I do this in many of my mocktails
- Use a darker sweetener like maple syrup when making the simple syrup
- Add a pinch of salt

- try frozen lime slices to keep it cold
