Of all the Chipotle recipes, fajita veggies are the most straightforward. Just red onion, bell pepper, oregano, salt and pepper. Sauté with a bit of oil and you've got the Chipotle flavor!

Ingredient Notes & Substitutions
- Extra Virgin Olive Oil: optional, or you can sauté in a nonstick for oil-free
- Green Bell Peppers: Chipotle uses green bell peppers, and green is my preference so that's what I used here. Feel free to use a different color, though note that red, orange, and yellow peppers are all sweeter than greens, so the flavor will taste slightly different from the classic Chipotle flavor
- Red Onions: you can also use a yellow onion
- Dried Oregano
- Salt

Step-By-Step Instructions
Step 1. Heat the oil in a large skillet over medium high heat. Add the peppers, onions, oregano, and salt. Cook stirring occasionally, for 5-7 minutes until golden brown and soft.

Ways to Serve Chipotle Style Beans
Use these beans anywhere you'd use meat or other bean recipes:
- Burrito Bowls: rice, beans, corn, salsa, guacamole
- Tacos or Fajitas: add lettuce, avocado, cilantro, and your protein of choice

- 2 Medium Green Bell Peppers thinly sliced
- 2 Medium Red Onions thinly sliced
