This is my homemade cilantro lime rice recipe! You can use either white or black rice - for this dish, just like Chipotle!

Chipotle lists ALL their ingredients for every single food they sell right on their website.
I took the exact ingredients that they list and developed a home-cook method for their rice.
Chipotle offers both white and brown rice - and this recipe works the exact same with both. Brown rice does take longer to cook than white, so be aware if you'd like to make the brown rice version.
The rice itself is super simple. Cook with a bay leaf, then toss with chopped cilantro, and a squeeze of lemon and lime juices!

Ingredient Notes & Substitutions
- White Rice: I used white rice, but you can also use brown rice
- Bay Leaf: adds flavor to the rice as it cooks
- Salt
- Cilantro: cilantro adds such a lovely freshness to the dish and really brightens up the flavor
- Lime & Lemon: to mimic Chipotle, use a squeeze of both fresh lemon and lime at the end

Step-By-Step Instructions
Step 1. Cook the rice according to the package instructions, adding the bay leaf and salt to the pot. (I use a rice cooker!)

Step 2. When the rice is cooked, remove the bay leaf. Then stir in the cilantro, lemon juice, and lime juice.

FAQ & Expert Tips
This rice will last in the fridge for up to a week, though it will be best within 1-2 days. Store in an air-tight container. Feel free to reheat in the microwave.
Any long grain rice is great. Short grain rice tends to be more sticky and if you prefer a sticky texture, feel free to use. Or use a brown rice!

Homemade Cilantro Lime Rice (Chipotle Copycat)
Ingredients
- 2 Cups Dry White Rice
- 1 Bay Leaf
- ½ Teaspoon Salt
- 1 Bunch Minced Cilantro
- Juice of ½ Lime
- Juice of ½ Lemon
Instructions
