    This Homemade Chili Corn Salsa is inspired by Chipotle's corn salsa side option. All the flavors you love, made in just a few minutes at home. A delicious side dish for homemade burrito bowls, tacos, and other meal prep!

    Welcome to my homemade Chipotle series!

    I'm recreating Chipotle favorites, using ingredients that Chipotle actually uses. Easily made at home - for the flavors you love about Chipotle. Cheaper, meal-preppable, and restaurant-style at any time!

    This is my homemade chili corn salsa recipe! A flavorful salsa made with a can of corn, a bit of spicy pepper, onion, and cilantro. It doesn't take much to create a tasty side dish that jazzes up your burrito or taco.

    I took the exact ingredients that they list and developed a home-cook method for their chili corn salsa.

    Salsa is SO easy to make. Just a few minutes of chopping for a super flavorful side.

    This homemade Chipotle style corn salsa recipe has the exact flavors of Chipotle, just in a home cooked setting!

    Ingredient Notes & Substitutions

    • Corn: I use canned corn. I look for the "no salt added" cans, which also tend to have no added sugar. You can also use frozen corn
    • Poblano Pepper: I love poblanos here! They are slightly spicy and add a nice underlying heat to the dish. If you can't find poblanos or want a lower spice option, use a green bell pepper instead (though labeled as slightly spicy, I do not find poblanos to contribute a significant heat level)
    • Red Onion: you can also use a yellow or white onion
    • Jalapeño: this salsa isn't spicy. If you want a spicy salsa, use more jalapeño and include the seeds
    • Cilantro
    • Lemon & Lime: chipotle uses both lemon and lime juice in their salsa and I think the combo helps create their signature flavor. If you prefer, you can just pick one
    • Salt

    Step-By-Step Instructions

    Step 1. Toss all the ingredients in a large bowl. If desired, let sit 20-30 minutes to let the flavors blend. Store leftovers in the refrigerator for up to a week.

    Ways to Serve Corn Salsa

    Use this salsa anywhere you'd serve corn, guac, or salsa:

    • Salads: as a more flavorful ingredient than plain chopped tomatoes
    • Quesadillas: served on top or dip the quesadilla in!
    • Burrito Bowls: rice, beans, corn, salsa, guacamole
    • Tacos: add lettuce, avocado, cilantro, and lime, and salsa!
    • Burritos: wrap with rice, salsa, and vegan cheese
    • Tostadas: layer over crispy tortillas
    • With chips: it is salsa after all!

    • Prep it! Salsa is super meal preppable and the flavors blend together the longer it sits. So this is a great one to make ahead of time and enjoy all week.
    • Chips: try my oil-free tortilla chips for dipping. Or, I've been loving Kroger's kettle-style tortilla chips - super thick and crunchy!

    • 1 15 Ounce Can Corn drained and rinsed
    • 1 Medium Poblano Pepper small diced
    • ½ Small Red Onion Minced
    • 1 Medium Jalapeño minced
    • ½ Cup Cilantro minced
    • Juice of 1 Lime
    • Juice of 1 Lemon
    • 1 ½ Teaspoons Salt
