This is my homemade tomato salsa recipe! It's an easy salsa made with roma tomatoes, onion and jalapeño. Super simple but adds tons of oomph to your burrito bowl!

Ingredient Notes & Substitutions
- Roma Tomatoes: you can also use beefsteak tomatoes or even cherry tomatoes if that's what you have on hand
- Red Onion: you can also use a yellow or white onion
- Jalapeño: this salsa isn't spicy. If you want a spicy salsa, use more jalapeño and include the seeds
- Cilantro
- Lemon & Lime: chipotle uses both lemon and lime juice in their salsa and I think the combo helps create their signature flavor. If you prefer, you can just pick one
- Salt

Step-By-Step Instructions
Step 1. Toss all the ingredients in a large bowl. If desired, let sit 20-30 minutes to let the flavors blend. Store leftovers in the refrigerator for up to a week.

Ways to Serve Tomato Salsa
Use this salsa anywhere you'd serve tomatoes, guac, or salsa:
- Salads: as a more flavorful ingredient than plain chopped tomatoes
- Quesadillas: served on top or dip the quesadilla in!
- Burrito Bowls: rice, beans, corn, salsa, guacamole
- Tacos: add lettuce, avocado, cilantro, and lime, and salsa!
- Burritos: wrap with rice, salsa, and vegan cheese
- Tostadas: layer over crispy tortillas
- With chips: it is salsa after all!

- Prep it! Salsa is super meal preppable and the flavors blend together the longer it sits. So this is a great one to make ahead of time and enjoy all week.
- Chips: try my oil-free tortilla chips for dipping. Or, I've been loving Kroger's kettle-style tortilla chips - super thick and crunchy!
