    Welcome to my homemade Chipotle series!

    I'm recreating Chipotle favorites, using ingredients that Chipotle actually uses. Easily made at home - for the flavors you love about Chipotle. Cheaper, meal-preppable, and restaurant-style at any time!

    This is IT! The final Chipotle bowl! (Or burrito.)

    What Goes In a Chipotle Bowl?

    The classic chipotle bowl consists of a base of rice, beans, protein (sofritas!), fajita veggies, and cold toppings like salsa, lettuce, and guac.

    I have recipes for all of these, but you definitely don't need to make every single component for a delicious bowl. Pick your favorites, grab a store bought version of something you don't feel like prepping - whatever works for you!

    Choose Your Rice

    Cilantro lime rice is the classic base for a Chipotle-style bowl. I make mine with fluffy rice, fresh cilantro, lemon juice, and lime juice and a bay leaf. It has a bright, citrus flavor that feels like iconic Chipotle.

    My recipe: Homemade Cilantro Lime Rice

    • White or brown: make it with either white or brown rice, just like at Chipotle.
    • Make it your base: Use as much or as little rice as you like depending on how hearty you want your bowl to be - I like to do half rice and half lettuce, instead of all rice

    Choose Your Beans

    Beans add a hearty element to the bowl, and plenty of fiber! They are seasoned with chipotles in adobo, for a slightly spicy, smoky flavor.

    My recipe: Homemade Chipotle Style Beans

    • Black or pinto: Use whichever you prefer, or make both! I personally love a mix

    Add Your Protein

    Sofritas are Chipotle's plant-based protein option, made with crumbled tofu. My homemade version uses super-firm tofu and a smoky spicy sauce.

    My recipe: Homemade Sofritas

    • Adjust the spice: sometime's Chipotle's sofritas are extra spicy - you can adjust the spice to your preference. Add extra chipotles in adobo for more of a kick
    • Customize the texture: Add a little more water for softer, saucier sofritas or keep them thicker
    • Double the recipe: if you're wanting to load up on protein, don't be afraid to make a double batch

    Fajita Veggies

    Chipotle's fajita veggies are a simple combination of sautéed peppers and onions. They're so simple, but so delicious. And the homemade version tastes exactly like Chipotle.

    My recipe: Homemade Fajita Veggies

    • Simple ingredients: all you need are bell peppers, red onion, oregano, and salt. If you like a different color of pepper, feel free to sub red or yellow in for the green

    Add Salsa & Fresh Toppings

    This is where you can really customize your bowl. Add your favorite salsa along with any fresh toppings you love.

    My recipes: Chili Corn Salsa and Tomato Salsa

    • Pro Tip: feel free to throw a can of corn in the tomato salsa or a few tomatoes into the corn salsa, instead of making both recipes

    Finish It With Guacamole

    A scoop of guacamole is definitely what you need to finish off your bowl. I use my Best Ever Guacamole which is BETTER than Chipotle's guac. Give it a try and you'll see.

    Assembling your bowl

    You can make your bowl totally your own, with your own ingredients and order, but I do have a recommended order for how I like the bowls, and what makes the most sense.

    Chipotle starts their bowls with rice, but when making a bowl for myself I like to start with lettuce. So I include that first here.

    Then after that, I just throw everything on top. For the photos I arranged the ingredients in a line, but when I make it for myself, I just create little sections in my bowl.

    Here's my suggested order:

    • Lettuce
    • Cilantro lime rice
    • Beans
    • Sofritas
    • Fajita veggies
    • Salsa
    • Corn
    • Guacamole

    Elizabeth's Kitchen Notes

    • More than just a burrito bowl: every recipe in this series uses ingredients that Chipotle lists on their website. I've never worked at Chipotle and don't know exactly how they prep each food, but I do know flavors! I took each food and used Chipotle's listed ingredients to create a home-cook method. The result is a bowl that really does taste like Chipotle, not just another burrito bowl.
    • Meal prep: these recipes are excellent for meal prep. Because there are so many components, making every single one on a weeknight is a bit much. But an hour or two of prep on the weekend can give you easy Chipotle bowls all week.

    Frequently Asked Questions

    What goes in a Chipotle bowl?

    Most Chipotle bowls consist of rice, beans, protein, fajita veggies, salsa, lettuce and guac.

    Can I make these bowls ahead of time?

    Yes! I highly recommend it. Prepping the salsas, shredding the lettuce, and making the guac make the day-of prep super easy.

    Storage

    Store hot and cold components separately. That way you can reheat rice, beans, veggies, and protein in the microwave, without nuking your salsas or guac.

    Homemade Vegan Chipotle

    Ingredients

    Chipotle at Home Recipes

    • Cilantro Lime Rice
    • Chili Corn Salsa
    • Tomato Salsa
    • Best Ever Guacamole
    • Beans
    • Sofritas
    • Fajita Veggies

    For bowls or burritos

    • 1 Head Romaine Lettuce shredded, for bowls
    • 4-6 Burrito Tortillas for burritos
    • Tortilla Chips homemade or store bought
    • Lime Wedges
    • Cilantro

    Instructions

    • Optionally, do your chopping all at once. To save time, you can chop a few things together and divide when you make each dish:
      2 bunches cilantro, minced
      8 roma tomatoes, diced
      2 poblano peppers, diced
      2 yellow onions, diced
      1 red onion, diced
      2 red onions, sliced
      2 green bell peppers, sliced
      2 jalapeños, minced
      3 lemons, halved for juicing
      4 limes, halved for juicing
      Lettuce, for the bowls
    • Prep your cold ingredients. Make the chili corn salsa, tomato salsa, and guacamole. Place in the fridge while you make the hot items.
      This step can also be done a day in advance.
    • Start the rice. Get the cilantro lime rice cooking on the stove or rice cooker so it's ready when you're done.
    • Cook the beans. The black or pinto beans can simmer gently on the stove.
    • Cook the sofritas. Prepare the sofritas, which take longer than the fajita veggies.
    • Finish with the fajita veggies. The fajita veggies are the quickest and easiest to throw on the stove at the end of the cooking process.
    • Return to the rice. Mix in the cilantro, lemon, and lime.
    • Assemble. Gather all the ingredients and arrange all the ingredients in your bowls.
